Summer is coming to an end and I haven’t been to the beach yet this year. I had a crazy desire to sit in a tent by the sea, with my feet in the sand, a caipirinha, coconut water, beer, etc. and such.

Of the beach snacks, my favorite is the shrimp with garlic and oil. Here we’re going to do it the Spanish way: you can call the dish gambas al ajillo.

A classic in tapas bars throughout Spain, prawns are incredibly simple to prepare. They only have six ingredients, two of which are optional: shrimp, olive oil, garlic, salt and, if you want, parsley and pepper (which you can add to taste or omit).

You don’t need to —and shouldn’t— spend money on large shrimp. The tastier giblets are the norm in this appetizer.

The traditional recipe uses peeled shrimp. There are people who leave the tail on, but I don’t see the point in having to pick up the shrimp’s tail while eating.

It is a food prepared with a lot of olive oil, enough to cover the shrimp. You don’t need to buy the best, most expensive olive oil, but be wary of those that are too cheap: counterfeit or adulterated oil will completely ruin the prawns.

The preparation is very quick, it literally takes five minutes.

First you heat the oil with the pepper. Although optional, I recommend using it: it adds an extra layer of flavor, in addition, of course, to the spicy flavor. I used two whole dried chillies (which I discarded later), go by your taste.

Then, over very low heat, it’s time to fry the garlic until it starts to brown. This is the step that requires a little attention to prevent the garlic from burning and making everything bitter.

Finally, turn up the heat and add the shrimp. One minute is enough to cook them, after that they start to harden.

As soon as the shrimp fall into the oil, they release a broth that mixes with everything and creates a delicious sauce. You don’t want to waste that sauce, so get some good bread to dip into the bowl.

It’s a snack, but you can also eat it as a meal. In this case, the best accompaniment is white rice, to mix with the shrimp broth, garlic and olive oil.

GAMBAS AL AJILLO

Ingredients

150 g gray shrimp, peeled and cleaned

100 ml extra virgin olive oil

2 dried chili peppers (optional)

4 sliced ​​garlic cloves

Salt to taste

Chopped parsley for garnish (optional)

Way of doing

  1. Season the shrimp with salt.

  2. Heat the oil over low heat with the peppers, then fry the garlic until golden.

  3. Increase the heat and add the shrimp. Fry for a minute, stirring quickly. Transfer to a bowl, sprinkle with parsley and serve immediately, with bread.
