It has already been shown that the airfryer is as useful a small appliance as a food processor or electric sandwich maker. She was received with distrust, she had the look of one of those things that gather dust in the little room of oblivion.

But the airfryer prevailed and turned out to be an excellent device for heating food quickly and without destroying the texture of the food (as the microwave does). It is also very good for roasting things and performs a function of its own: it simulates frying, achieving an acceptable result with very little oil.

One of my favorite uses of the airfryer is to dehydrate food. Is a fruit passing the point? You heat it, continuously and for a long time on a low temperature until the water evaporates and the flavors are concentrated.

You can easily make dried tomatoes in the airfryer. Dehydrated briefly, halfway between roasting and drying, tomatoes make a fabulous sauce that doesn’t need any more heat to be ready.

What you need, and a lot of them, are excellent and ripe tomatoes, because the sauce in this recipe is very simple, it doesn’t have to be disguised for an ingredient more or less.

If the tomatoes are good, I promise you, you’ll have the best sauce you’ve ever had (and the complaints department has a ready response to complaints: buy better tomatoes next time).

I like Italian-style tomatoes, elongated and sweeter than carmine or deborah. If they are organic, so much the better.

The recipe is detailed below, but it’s so simple that it can be summed up in one sentence: you dehydrate the tomatoes and garlic in the airfryer, then process them with salt and seasonings.

It is a sauce that can be eaten hot or cold. With pasta, pizza, sandwiches, canapés, whatever you like.

I used a kilo of tomatoes to make it easier, but measurements matter very little here. The game is to make the sauce, use as much as you need and store the rest in the fridge, inside a jar. It lasts a week that way.

TOMATO SAUCE IN AIR FRYER

Difficulty: easy

Ingredients

1 kg of ripe tomatoes

3 cloves of garlic

Salt, red pepper, oregano and basil to taste

Way of doing

  1. Cut the tomatoes in half, lengthwise. Distribute in the airfryer basket and bake, with the garlic cloves whole and unpeeled, for 2 hours at 80ºC.

  2. Wait for it to cool down. Peel the garlic and remove the skin from the tomato.

  3. In a processor, beat the tomato and garlic with the pepper, oregano and basil. Season with salt and transfer to a pot.
