How to make potato pancakes – 03/20/2023 – Marcão’s Recipes

There is bad talk (and not without reason) about English cuisine, but there is one meal that almost every other country leaves in the shade: breakfast.

The “full English breakfast” is a feast that can include sausage, blood sausage, beans with tomato sauce, mushrooms and fried bread, in addition to the traditional eggs and bacon. You can skip lunch after eating like that.

The American breakfast, also hearty, is a domesticated version of the English breakfast.

Something I love about these meals is the presence of potatoes. Why the hell do people not eat potatoes in the morning in Brazil? I know that in some regions coffee has yams and sweet potatoes, but the approach is different.

American breakfast potatoes are called “hash browns”. It’s a version of Swiss rösti, grated potato on the griddle.

The English, on the other hand, like something called “bubble and squeak”. It is made with mashed or leftover boiled potatoes plus whatever is left over from the previous dinner. Vegetables like cabbage and brussels sprouts are frequent in this recipe.

The dish I propose today is a potato pancake, which is halfway between “hash brown” and “bubble and squeak”.

To make life easier, I use boiled and mashed potatoes, then toasted on the griddle. But I don’t stuff the pancake with stuff like the English do. I only use onions.

It’s best to have a griddle to make these pancakes, but a wide iron skillet will do just fine. Don’t use anything with a non-stick coating as we’ll be scraping the bottom of the pan. By the way, also get a good metal spatula, the kind you use to fry hamburgers.

The moment you toss the mashed potato onto the griddle, it seems like there’s never going to be a cute little round pancake. Take it easy. After browning and shaping and flipping a few times, it’s easy to get a regular shaped pancake.

I served my pancake with bacon, egg and grilled tomato. You can eat it with ham or sausage if you want even more brutality; swap out the bacon for zucchini, peppers or eggplant for a vegetarian version; or even eliminate the eggs and make a vegan pancake.

It is not a coffee for every morning, not least because it requires time-consuming preparation. Leave it to do it in the laziness of the weekend.

Precious tip: cook the potatoes the night before. It’s much easier to peel them cold in the morning.


POTATO PANCAKE

Performance: 2 servings

Difficulty: easy

Ingredients

2 boiled potatoes

1 chopped onion

1 tablespoon oil or bacon fat

Salt and black pepper to taste

Preparation

1. Heat the griddle or skillet over low heat.

2. Peel and mash the potatoes. Season them with salt and pepper.

3. Fry the onion in a little oil, stirring it constantly with the spatula to get a uniform result. Mix the fried onion with the potato.

4. Put the remaining oil in the griddle and add the mashed potatoes. Flatten it with the spatula and let it fry for a few minutes, until it forms a crust on the bottom. Turn with the spatula, trying to preserve this crust, and repeat the operation with the other side of the puree blade.

5. Divide the puree in half and shape, with the spatula, two round pancakes. Fry on both sides until both are golden brown. If it falls apart, mold the pancake again. One hour will work!

6. Serve with bacon strips, fried egg and grilled tomatoes.
