A Minas Gerais delicacy often claimed by São Paulo and Goiás, tropeiro beans are a dish whose origins date back to the tropeiros’ travels in colonial Brazil. These traders needed a meal that was energetic enough to sustain them for long periods on the road, but that was also easy to prepare in improvised conditions.
The basic recipe for tropeiro beans consists of cooked beans, typically carioca beans or butter beans, mixed with cassava flour, sausage, bacon, eggs and a variety of seasonings, such as garlic, onion, green chilli and pepper. The dish is sometimes enriched with other ingredients, such as cabbage, cracklings and bacon.
I personally prefer to use red beans, as their larger size compared to carioca and their darker color add a special charm to the dish.
TROPEIRO BEANS
Ingredients
500g red beans
250g chopped pepperoni sausage
150g chopped bacon
3 tablespoons of olive oil
3 cloves of garlic, chopped
1 chopped chili pepper
1 tablespoon chopped parsley and chives
4 boiled eggs
1 cup cassava flour
Sliced cabbage
Salt to taste
Method of preparation
Cook the red beans with salt for 20 minutes in the pressure cooker, until they are cooked but firm, without falling apart. Drain and reserve.
In a pot or pan, heat the olive oil and brown the Calabrian sausage and chopped bacon. Add the onion, chopped garlic and pepper, sautéing until golden.
Add the cassava flour and sauté for another 5 minutes over low heat, stirring constantly.
Add the cooked beans and sliced cabbage, mixing well for another 5 minutes until the cabbage wilts.
Finish with chopped boiled eggs, parsley and chives. Adjust the salt if necessary.
Serve hot accompanied by white rice and farofa and enjoy this dish that is a true delight of Brazilian cuisine.
