Zaiyu Hasegawa, one of Japan’s most prestigious chefs, arrives in the capitals of São Paulo and Rio de Janeiro in April to cook with Brazilians Helena Rizzo, Willem Vandeven, in the first city, and Alberto Landgraf, in the second.

Owner of the two-Michelin-starred restaurant Den, ranked 8th on Asia’s 50 Best Restaurants 2024 list, Hasegawa is known for his creative and contemporary Japanese cuisine, executed with seasonal ingredients. Respect for the four seasons of the year, a hallmark of Japanese culture, can also be observed in his work.

In São Paulo, the Japanese chef debuts this year’s “Segundas no Maní” series of meetings. On Monday (15), he prepares an eight-course menu prepared in partnership with Helena Rizzo and Willem Vandeven at the Maní restaurant. The menu costs R$940. Pairing with wine and sake, separately, costs an additional R$490.

Among Hasegawa’s signature dishes are pork loin tapioca with Japanese spices and a salad of seasonal leaves and vegetables. Helena Rizzo and Willem Vandeven prepare watermelon with prawn shrimp, ponzu sauce, tomato and borago, among other recipes.

Three days later, on Thursday (18), Hasegawa cooks alongside Alberto Landgraf, in Rio de Janeiro, to celebrate the six years of the Oteque restaurant. The dinner costs R$2,000 and includes drinks pairing.
