Present in different Latin American countries, ceviche was born in the pre-Columbian era, over 4,000 years ago, and today it is successful all over the world. So much so that there is even a date on the international calendar to celebrate this preparation: June 28th.

A traditional dish from countries like Peru, Chile and Colombia, ceviche can be prepared with different ingredients — such as fish and seafood — that are marinated in an acidic mixture with spices to taste.

Altar
In the neighborhood of Vila Madalena, next to Beco do Batman, is located the Altar Cozinha Ancestral restaurant, idealized by the chef and GNT presenter Dona Carmem Virgínia. One of the dishes served there is the Apetebi de Orumilá – Ikofa Fu (R$ 47), a ceviche with white fish, white corn, milk of a tiger (juice from the marinade) based on coconut milk, onion, pepper , macassá oil (African plant) and yam chips.

Located in the house that belonged to actress Cacilda Becker, the modern and affective food restaurant is run by chef Luiza Hoffmann. On the menu, there is lychee ceviche with wild rice popcorn (R$ 44.80).

Badaue
The restaurant offers caiçara cuisine recipes with contemporary touches, prepared with fish and crustaceans. There are three ceviche suggestions on the menu: seafood with scallop, octopus and shrimp (R$105), white fish (R$79) and salmon (R$79).

Commanded by chef Marco Espinoza, it specializes in modern chifa cuisine, a mixture of Peruvian and Chinese cuisine found in Lima. In the central region of São Paulo, the restaurant celebrates the date with a promotion that offers free ceviche after an order. Among the options are fish, shrimp, octopus, shellfish and squid, salmon and vegetarian.
