Minas cuisine is one of the great attractions for tourists visiting Belo Horizonte. Wood stove, sausage, chicken, angu, bean tutu, farofa and cheese are some of the pillars of this kitchen that awakens the affective memory of many people.

At the state level, it gained official recognition when it was declared intangible cultural heritage of Minas Gerais, on the Minas Gerais Gastronomy Day, celebrated on July 5, by the State Institute of Historical and Artistic Heritage of Minas Gerais, Iepha-MG.

With that in mind, see a selection of five restaurants in Belo Horizonte that preserve the tradition of Minas Gerais cuisine.

Miss Lucinha
Founded in 1990, the restaurant is named after its founder, who has already received several honors, including a bronze statue in Belo Horizonte’s Central Market. A teacher at the rural school in the city of Serro, Lucinha works to value ingredients and simple dishes from her region. Thus, two concepts emerged: the tropeiro’s kitchen, based on the diet of those who worked in the mines and needed less perishable food; and farm cuisine, inspired by the villages of Minas Gerais, which includes foods considered wet and made with fresh ingredients.

The restaurant follows these two concepts and offers dishes such as chicken with okra (R$62), accompanied by rice, beans, cabbage and angu; canjiquinha with ribs (R$ 50), served with white rice, beans and cabbage; and tropeiro beans (R$62) with rice, sausage, crackling and cabbage. The most ordered dish is the mineirinho (R$62), made of pork ribs with rapadura sauce, accompanied by rice, bean tutu, watercress and fried garlic. The São Paulo unit, in Indianópolis, has a daily lunch buffet (R$59.90 per person during the week; R$79.90 on weekends).

Café Palhares
The cafe and restaurant was founded in 1938 and has already won first place at the Comida di Buteco festival in BH three times. For breakfast, free-range chicken pie (R$5) and fried ground beef pastry with potatoes and chives (R$3) are served, which can be accompanied by strained coffee (R$2) or espresso (R$4). From 10 am, lunch is available to be consumed at the counters surrounding the kitchen.

The only dish on offer is kaol (R$29.90), pê-efe made with rice, bean farofa, cabbage, egg, pork rinds and meat covered with tomato sauce, which can be sausage made daily in the house, roasted leg, beef tongue, tripe and cooked meat. Kaol was created in the 1950s as a late-night meal served to restaurant staff. The bohemians passing by the address felt the aroma of the food and began to ask for it, and thus it entered the menu.

xapuri
The restaurant was founded in 1987 by Nelsa Trombino, with a strong presence of handmade sausage and bacon in the dishes. At lunch and dinner, it offers starters such as sausage with onion (R$46.90) and belly crackling (R$39.90). Among the main dishes are the chicken preguento do Bento (R$ 163.90, for four people), chicken in a thick broth accompanied by rice, beans, okra, angu, chayote and cabbage; mexidão mecido a beast (R$ 102.90, serves two people), a combination of fillet mignon, rice and beans, sausage, bacon, eggs, flour and cabbage; and the pan-roasted sirloin (R$105.90, serves two people), accompanied by rice, tutu, cabbage and potatoes.

Those who like dessert will appreciate the dessert table (R$ 95/kg) at the restaurant, which brings together more than 30 representatives of Minas Gerais confectionery, such as dulce de leche, guava paste and fig jam, made in a copper pot on top of a wood stove.

With headquarters located in a mansion listed by the Cultural Heritage of Belo Horizonte, Bolão is famous for having among its regulars, since its inauguration, in 1961, several bands from Minas Gerais, such as Sepultura, Pato Fu and Clube da Esquina. The menu is full of hearty dishes with homemade seasoning that serve one to two people, such as scrambled eggs (R$34); spaghetti bolognese (R$28); and skank (R$55), a tribute to Henrique Portugal, the band’s keyboardist who always orders the same dish, made with onion fillet, rice with meat broth, and tomato and heart of palm salad.

One of the house’s flagships is the rochedão (from R$38), pe-efe with rice, three options of beans (common, tropeiro or tutu), two protein options (common beef steak or breaded) and side dishes (spaghetti or fries). The bar and restaurant is also famous in the early hours as a stronghold for bohemians looking for wet bread (R$8), French bread with bolognese sauce, cheese and chives on top.

Maria das Tranças
The restaurant was founded in 1950 by Maria Clara Rodrigues and, in its early years, had a loyal customer: Juscelino Kubitschek. At the time, chicken, the basis of the house’s cuisine, was immediately slaughtered on the patio and then sent to the kitchen. Seventy-three years later, under the command of the third generation of the family, the tradition remains.

The most ordered dish, chicken in brown sauce (R$85, serves up to four people), is slaughtered on the day and served with rice, okra and angu. Maria das Tranças offers other types of chicken with okra, cornmeal or fried onions, all priced at R$85 and served with rice, okra and angu.
