A dish created by chef Rodrigo Oliveira, from Mocotó, the tapioca dadinho easily adapted to the São Paulo night menu in bars and restaurants around the city. This is because the dish is not only tasty, it is also easily made and is accompanied by a variety of sauces that shape its flavor.
With happy hour approaching, chef Thiago Sodré, from Pasquim Bar e Prosa, recommends a simple and practical recipe for a tapioca dadinho accompanied by sugarcane molasses.
Easy and with just over an hour to prepare, the recipe uses Minas cheese, milk, salt and, of course, tapioca and can be fried, baked in the oven or even in the always practical airfryer. Check out the full recipe below.
Tapioca Dadinho with Cane Molasses

Recipe by chef Thiago Sodré, from Pasquim Bar e Prosa
Ingredients
- 500g granulated tapioca
- 500g grated standard Minas cheese
- 2 liters of milk
- 1 tablespoon of salt
Method of preparation
- Mix the tapioca with the grated Minas cheese;
- Place the milk in a pan along with the salt and heat until it starts to boil.
- Scald the tapioca mixture with the milk and stir well to incorporate;
- Pour the mixture into a tray greased with olive oil, spread it out well, cover it with plastic and take it to the fridge to firm up;
- Remove from the board and cut the dough into squares. Pass the sprinkle to prevent them from sticking;
- Fry and serve with cane molasses;
- In the oven or in the airfryer, bake at 200ºC until golden, approximately 10 to 15 minutes.
