My son’s school threw a party where parents were supposed to bring some kind of food “accompanied by a recipe to socialize.”

I confess that I read the invitation without much attention and did not record the community revenue part.

When I got there, I saw a bunch of papers with recipes. And also pens, but my prescription was too long to write on my arm, with the marker.

So I decided to correct the problem here. For a very large community.

I took a plate full of pulled pork sandwiches to school. Translation: shredded pork. Made with sirloin tops, it is an excellent alternative to ham and crazy meat, for any type of party.

Pulled pork is one of the most popular dishes of what Americans call barbecue. It’s not exactly a synonym for barbecue.

Barbecue is a method of preparing meat on large barbecue grills that are also smokers. Traditional throughout the southern USA, it is often associated with Texas – a state famous for its carnivorous habits.

In addition to pulled pork, barbecue classics include brisket (beef brisket), pork ribs and smoked chicken wings.

As I obviously don’t have a pit (the smoker), I cooked my pork in the pressure cooker. And the smoked one, how is it? We solve this with some seasoning.

The typical barbecue flavor comes from a blend of dry seasonings, including smoked paprika, garlic and onion powder. You can find these at the fair and in those so-called healthy product stores, which also sell Peruvian maca and eight different types of quinoa.

In the case of this pulled pork recipe (there are millions of others possible), the shredded meat is then bathed in barbecue sauce (another very broad concept, but which here refers to something similar to ketchup, with sugarcane syrup and liquid smoke).

You’ll probably buy ready-made sauce, so look for a decent brand. If you want to make it at home (you will), I published a simple recipe, right here in Folha, on April 29, 2022.

PULLED PORK

Difficulty: simple

Performance: 20 sandwiches

Ingredients

1 piece of 1.2 kg of sirloin steak

2 tablespoons mustard

1 tablespoon garlic powder

1 tablespoon of onion powder

1 tablespoon smoked paprika

1 tablespoon black pepper powder

1 tablespoon of salt

1 tablespoon lard or vegetable oil

2 onions coarsely chopped

1 cup barbecue sauce

Way of doing

  1. Brush the tenderloin cup with the mustard mixture and all the dry seasonings. Let it taste for about half an hour.

  2. In the pressure cooker, melt the lard (or heat the oil). Brown all sides of the meat, add the onion and sauté for 2 minutes.

  3. Cover the pan and, after coming to pressure, cook for 1 hour over low heat.

  4. Release the pressure, shred the meat and mix it with the pan broth and barbecue sauce. If necessary, adjust the salt. Serve hot or at room temperature.
