Whether due to family influence or to follow Christian tradition, many Brazilians take advantage of Good Friday or Easter to prepare bacalhoada. And those who are vegan, vegetarian, or don’t eat fish for other reasons can prepare a potato-based substitute: “batalhoada”.
Chef Luciane Turati, from Tonga Comedoria, teaches the recipe for the vegetarian batalhaada — the suggested boiled eggs can be removed if the people eating the dish are vegan. The cook runs a kitchen that delivers vegan frozen foods and also hosts events in São Paulo.
Battle
Ingredients:
- 200g English potato
- 3 boiled eggs
- 2 red onions
- 60g pitted black olives
- 100g of peach palm hearts, sliced
- 3 colored peppers
- 60g cashew nuts
Method of preparation:
- Cut potatoes, peppers and onions into slices
- Potatoes need to be pre-boiled to make cooking easier.
- In a baking dish, layer layers with previously boiled potatoes, peppers, onions, boiled eggs and hearts of palm.
- Place the olives and cashews on top and drizzle with plenty of olive oil.
- The big secret is to use powdered nori seaweed between the layers to give your recipe that taste of the sea.
- Place the baking dish in the preheated oven at 200º C for 30 minutes (cover with aluminum foil and remove in the final 10 minutes)
