This pie with simple ingredients and uncomplicated preparation, with dough made from breakfast cereal, is a good alternative to change up your weekend desserts. The filling includes plums and fresh cream.

Ingredients

For the crust:

  • 170 grams of cornflakes (about 5 cups)
  • 3 tablespoons of sugar
  • 1/4 teaspoon salt
  • 115 grams unsalted butter, melted and cooled

For the filling:

  • 4 large egg yolks
  • 1 large egg
  • 60 ml of honey
  • 50 grams of sugar
  • 40 grams of cornstarch
  • 1/2 teaspoon salt
  • 240 ml whole milk
  • 240 ml fresh cream

To serve:

  • 240 ml fresh cream
  • 454 grams of ripe plums, pitted and sliced
  • 1 to 2 teaspoons of honey (optional)

How to make:
1. First, make the dough crust that is the base of the pie. Preheat the oven to 350 degrees with the rack in the middle position of the oven. Blend cornflakes, sugar and salt in a food processor until finely ground. Add the butter and pulse until the mixture resembles wet sand.

2. Transfer cornflake mixture to a standard 9-inch pie pan. Using a flat-bottomed measuring cup, press the mixture into the sides and base of the pie pan. Bake on the middle rack until dry and golden, about 25 to 30 minutes. (If the crust sinks or puffs up while baking, gently press it back into place while it is still hot with the measuring cup and proceed.) Let cool completely.

3. Then, make the filling. Whisk the egg yolks, egg, honey, sugar, cornstarch and salt in a medium saucepan. Add the milk and cream and place over medium high heat. Cook, stirring continuously, until the mixture thickens and begins to bubble, about 4 to 7 minutes. Continue to cook, stirring for another 1 minute. Pour the mixture into the cooled dough and spread into an even layer. Press plastic wrap directly onto the surface of the filling and refrigerate until firm, at least 3 hours or overnight.

4. Then, make the topping. Beat the cream using an electric mixer until soft whipped cream peaks form. Place spoonfuls of cream on top of the pie, top with plums and drizzle with honey, if desired.
