Chocolate salami is a traditional sweet from Portuguese cuisine. The dessert is made in roll format, similar to a typical meat salami, with chocolate, maria biscuits, butter and eggs.
Walnuts, almonds, hazelnuts and pistachios can also be added to add more flavor and texture to the dish. The recipe is by Heloisa Bacellar, chef and founder of the Atelier Gourmand gastronomy school, in São Paulo.
INGREDIENTS
OPTIONAL
- ½ cup whole, roasted almonds, chestnuts or pistachios
- 1 tablespoon of rum (15 ml)
METHOD OF PREPARATION
- In a clean, dry bowl, melt the chocolate in the microwave for a couple of minutes or in a bain-marie.
- Add the biscuits, butter and stir until you get a homogeneous mixture.
- Spread a rectangle of plastic wrap or baking paper or aluminum over the marble. Form a roll of about 2 cm in diameter in the center of the film, wrap it, close it well and roll it to form a cylinder shape.
- Place the cylinder on a baking tray and refrigerate for an hour.
- When you remove it, roll it gently to adjust the shape and return it to the fridge for at least another five hours, or up to a week.
- When serving, unwrap the salami and cut into slices approximately 0.5 cm thick. Serve chilled
