School holidays bring a challenge for parents who cook. The child(ren) spend(s) more time at home and expect(s) you to prepare delicious food for them. More than that, expect(s) special foods. Sweets almost always satisfy.
I, who am not a big fan of sweets, am doing my best to please Pedrão on vacation. Cooking sweets is something completely different from making savory dishes, especially if you venture into baked goods such as cakes and pies. The measurements need to be exact, and any mistake results in irreversible failure. I’ve never baked a cake in my life. I am scared.
However, for Pedro, I decided to do something similar. Clafoutis, a French specialty that lies between cake, pie and pudding. It’s extremely easy to make — just blend the ingredients in a blender and bake — and disaster-proof.
Clafoutis consists of a very liquid dough, which after baking becomes creamy, with fruit. The most traditional takes cherries. Cherries are expensive and need to be pitted, which is a bit of a hassle.
I went blueberries. Nor are they cheap, but what the hell: Pedro loves them. You can make it with strawberries, peaches, plums, almost any fruit. Those with some acidity work best – no, don’t even think about making it with lemon (or any citrus fruit, which releases water in the dough).
The other ingredients are absolutely banal, with the exception of vanilla. I used natural vanilla extract. Fava beans are even better. If you only have synthetic essence, I suggest omitting it. I don’t like the artificial flavor, but to each his own.
You will need a mold that is not very deep – mine is 20 cm in diameter and 4 cm deep. To portion milk, sugar and flour, all you need is a measuring cup, the kind you buy at the fair.
Clafoutis tastes best when you eat it warm, shortly after it comes out of the oven. To make it last longer, eat it with ice cream.
BLUEBERRY CLAFOUTIS
Performance: 4 servings
Difficulty: easy
Ingredients
3 eggs
300 ml of milk
160 ml of sugar
120 ml of flour
1 teaspoon(s) vanilla essence
1 tablespoon unsalted butter, at room temperature
250 g blueberries
icing sugar for sprinkling
Way of doing
1. Heat the oven to 220ºC.
2. In a blender, beat the eggs, milk, sugar, flour and vanilla.
3. Unite the shape with butter. Add the blueberries and, over them, pour the beaten mixture.
4. Bake for 40 minutes to 1 hour, or until the center of the clafoutis has solidified. When it is close to being ready, the candy rises like a soufflé. Let it cool for a few minutes, until the dough deflates. Sprinkle with icing sugar to serve.
