Gaucho chef Rodrigo Bellora took on a bold mission: to show the soul of Rio Grande do Sul. To this end, he invites you to refined Gaucho cuisine, highlighting fresh ingredients and culinary creativity. This combination is revealed throughout the menu served at Alma RS, a restaurant designed by Bellora and located in the Parador Cambará do Sul guesthouse – recently elected as the Best Pousada in Serra do Brasil in a competition by the magazine Travel & Tourism.

“Our cuisine tries to show the soul of Rio Grande do Sul and Southern Brazil. We work with the rescue of techniques and recipes, combined with a more contemporary presentation and with the appreciation of ingredients and producers. The cuisine at Alma RS is a cuisine of a southern nature, where we show everything from the influences of immigration in this gastronomic construction of the South, to our ancestral roots and original peoples. Connection and fusion of techniques, influences, textures, aromas and flavors”, reveals the chef.

This approach combines respect for tradition and the appreciation of local flavors with modern culinary creativity, resulting in dishes that tell a story through food. It’s a way to appreciate the rich food culture of Campos de Cima da Serra and reconnect with the authenticity of the flavors of Gaucho cuisine.

Fresh carpaccio, mountain cheeses, soft eggs, wild mushrooms, pine nuts, matambre, ribs, corn are some examples of ingredients that make up the fusion of dishes. Everything made to be enjoyed slowly, in a combination that involves regionality, seasonality, contemporary and ancestral culinary techniques, a wood-fired oven and, of course, working directly over the fire.

In this way, the Alma RS restaurant offers a seasonal menu rooted in southern cuisine, cooked directly over the heat of the parrilla fire and the wood stove in the kitchen. Fans of the traditional barbecue prepared over an open fire, in fact, have an appointment every Wednesday and Saturday at Parador Cambará do Sul.
