Shrimp risotto

Ingredients
- 100ml high quality extra virgin olive oil
- 160 g of arborio rice
- 600 g of shrimp
- 30 g of onion
- 10 g of garlic
- 100 ml of white wine
- salt and parsley, to taste
Method of preparation
- Clean the shrimp and reserve it.
- Take the peels and heads to a low heat, seasoned with a little salt. After boiling, grind the mixture well, strain and then reserve the water.
- Saute garlic and onion in olive oil. After, add the rice and let it fry a little, for 2 minutes, stirring well.
- Add the white wine and let it reduce. Gradually add the broth made with the shrimp shells until the rice is cooked, stirring occasionally.
- Sauté the shrimp in olive oil and garlic. Sprinkle with the chopped parsley and serve over the risotto.
