On this Mother’s Day, I want quiet. No preparing lunch, much less facing queues at restaurants. I intend to be woken up in the morning with a nice cup of coffee in bed and to stay horizontal until at least three in the afternoon — so the delicacies will have to be reinforced to elevate the morning meal to a brunch.

If you are, like me, a mother who knows that you are not going to be surprised with the best gift — peace of mind — this Sunday, plan your own surprise. Send this column to your son, daughter, partner or partner and make sure they read until the end.

May they wake up earlier, tiptoe out of the room, close the kitchen door and prepare our breakfast, please.

A good vegan breakfast starts with vegetable milk, which can be prepared at home, with rolled oats and water. Just mix a liter of warm water with ¾ cup of rolled oats for two minutes and the milk is ready to go with your coffee. Oat milk can also be blended with frozen banana slices, cocoa powder and dates. This is just a suggestion, we accept any mix: with strawberries, with mango and grated coconut, with avocado or, who knows, with a little piece of each fruit?

Drinks sorted, let’s get to the delicacies. For a practical menu, the order is to put a lot of effort into a board with bread and/or toast with different toppings. Avocado crushed and seasoned with oil and salt is delicious on top of bread, and half slices of tomato can be used to decorate and add flavor.

Peanut butter and jelly is one of the few American culinary inventions worth cherishing. Hummus and scrambled tofu are good options for vegetable toppings for breads, as well as, of course, a good vegan butter, or even a good olive oil.

Sliced fruit with granola can and should be included in the breakfast tray. Those who want to surprise can also prepare a “chia pudding”: just mix ¼ cup of chia seeds with 1 cup of vegetable milk, sweeten as you wish and refrigerate for at least four hours before serving. The delicacy can be prepared the day before. When serving, choose a glass or a glass bowl. The chia pudding topped with delicately cut fruit beautifies any day and still makes us wake up with that feeling that we are, after all, healthy.

And speaking of delicacies that can be prepared the day before, don’t forget the cheese-free breads, perfectly vegan, made with potatoes and manioc flour. For one cup of boiled and mashed potatoes, mix ¾ cup of sour tapioca, ¾ cup of sweet tapioca, ¼ cup of olive or other vegetable oil and a teaspoon of salt. If you want to give it your chef’s touch, add a aromatic herb like basil. A little water will be needed to bind the dough together. Mix everything very well, make small balls and put them in the freezer. The next morning, bake the rolls for 30 minutes at 180 degrees and be careful not to eat everything before the tray reaches the room.

Oh, and don’t think you’ll escape the pancakes! Write down this recipe, super simple: mix a cup of oat flour in flakes with a cup of vegetable milk, a ripe banana and a teaspoon of yeast. Take the dough to cook in the skillet, forming circles with a ladle, on both sides. Decorate with fruits, jam, molasses and cashew nuts or peanuts.

On our side, we promise to keep our eyelids firmly closed until the moment the tray lands on the mattress.
