You have to pass shelves of cheese, chocolates, sweet and savory cookies, fruits and olive oils to get to Giro Ristobar, the new Italian restaurant at Eataly.

Opened at the end of September, the Giro is on the ground floor of the Italian gastronomy market in Vila Nova Conceição. The complex in the south zone was brought to São Paulo in 2015 by SouthRock Capital, the same group as Starbucks and Subway, which filed for judicial recovery this week.

The new restaurant has its own management and is led by Minas Gerais restaurateur Felipe Santiago and chef Salvatore Loi, also in charge of the trendy Modern Mamma Osteria and Ella Fitz.

The Italian based in Brazil worked in the kitchen at Fasano, where he spent 13 years of his career, and created the menu of other businesses in the capital of São Paulo in recent years, such as Mondo and Ristorantino — but ended up leaving the company or the restaurants closed their doors .

At Giro, the chef presents a menu of classic Italian recipes with a modern twist. A sinuous-shaped counter occupies the room, open to the market, and customers sit at high tables —a little difficult to reach—, which follow these lines. From there, you can watch the preparation of artisanal pasta and behind the scenes in the kitchen.

It has become a house classic to open the meal with burrata stuffed with mini buffalo mozzarella, served over spaghetti, accompanied by dehydrated black olives, cherry tomatoes and white chocolate shavings, whose sweetness is barely felt in the combination. The dish costs R$59.

The ravioli, made with fresh pasta without eggs, is a light main option. Stuffed with ricotta, lemon and topped with San Marzano tomato sauce, it costs R$69.

Another hit is the lasagneta, a familiar Loi recipe, made with layers of thin pasta and vitello ragout, accompanied by two sauces: grana padano cheese fonduta and demi glacé (R$ ​​78).

There are also rice cakes, tartare, gnocchi, risottos and meat and fish dishes on the menu. To sweeten it, the mascarpone cream gets a crunchy layer, pistachio flour and pieces of the fruit on a tart (R$ 36).

At one end of the long counter is a wine cellar, with Italian labels, and a cocktail bar. From there, classic and signature drinks are shipped such as the alba, prepared with gin, Amaretto liqueur, turmeric, lillet, lemon and Chianti wine (R$42).

The Giro arrives to expand the options of places to eat at Eataly. At the gastronomic address, there are other themed restaurants (Pasta & Cucina, Bistecca and Trattoria Italia), a cafeteria, ice cream shop, bakery, pizzeria and sweet shop, spread over three floors.
