This Tuesday (25) the Paraná menu at Clube Curitibano will be prepared by Sérgio Medeiros, from Curitiba Honesta, and João Soto, from Farofa Bar e Restaurante. Dinners, in the form of cooking show classes, are traditional among members and guests who sign up. This year, they are curated by André Bezerra, a columnist specializing in gastronomy and a collaborator at Bom Gourmet.

In this week’s edition, the entry of jaguar meat will be prepared by Sérgio Medeiros. The main course (Copa roasted Moura pork loin, marinated with black beer and spices, garnished with parsley potato muslin and pine nut farofa with beef jerky) and dessert (Verrine perfumed with coffee from the pioneering north with guava syrup from Carlópolis) , will be in charge of chef João Soto.

*Sérgio Medeiros, author of the research for jaguar meat to become intangible cultural heritage in Curitiba, is in charge of Curitiba Honesta, which organizes the Pão Com Bolinho and Carne de Onça festivals.

*João Soto is a professor of gastronomy and owner of Farofa Bar e Restaurante. Adept at using fresh products, preferably local, chef Soto created a menu with products from Paraná, some of which have Geographical Indication in the state.
