Cachaça Day: Bars in SP serve drinks with the drink – 09/13/2023 – Bars and nightlife

Pinga, cana, branquinha: no matter the nickname, cachaça has become a symbol of Brazilian culture. The distillate even has its own day to be celebrated, National Cachaça Day, this September 13th, a date made official in 2009 by the Brazilian Cachaça Institute (Ibrac).

There are several factors that attest to its popularity. The drink, produced from sugar cane since the time of Colonial Brazil in the 16th century, is considered national historical and cultural heritage. It is also the third best-selling spirit in the world, according to Ibrac, behind only vodka and soju, typical of South Korea.

Sometimes associated with a cheap and low-quality drink, cachaça is gaining ground as an ingredient in drinks in cocktail bars in São Paulo, in more elaborate recipes, in addition to the classic caipirinha.

According to Néli Pereira, mixologist and author of the book “Da Botica ao Boteco: Plantas, Garrafadas e a Coquetelaria Brasileira”, this break in prejudice in the image of cachaça in recent years is related to factors such as the appreciation of the distillate outside the country and the work of artisanal brands.

The movement is also driven by the popularization of drinks that contain cachaça, such as macunaíma and grosso de galo — internationally recognized as a classic on the International Bartender Association (Iba) list, alongside caipirinha.

“Cachaça is already popular. This prejudice that exists has to do with the lack of knowledge about the distillate. People think that an expensive whiskey is good, but that a drink costing up to R$50 is not good”, says Néli . “I like to think of cachaça as part of a change in mentality that has been happening, which is an appreciation of what is Brazilian.”

Dome
The bar, voted the best new product of the year by the special O Melhor de São Paulo Gastronomia, has four drinks with cachaça on the menu, signed by bartender Mari Mesquita. The highlight is the galo’s tail (R$42), made here with cachaça with green coffee, dry vermouth and green leaf bitters. Another suggestion is the so-called cachaça / acerola (R$ 42), with cachaça, white vermouth and acerola preserve.

Zebra Space
Bartender Néli Pereira makes a point of having three or four drinks made with cachaça on her menu, which usually varies each week. The so-called padim (R$40), a version of the godfather prepared with cachaça aged in oak with amareto, and the grosso di gala (R$35), which contains cachaça with Cynar and coffee liqueur, may appear.

The restaurant dedicated to sandwiches has a menu that highlights several cocktail options made with cachaça, made by the Minas Gerais brand Arbórea for the house, at friendly prices. The distillate appears in drinks such as the so-called cafa (R$29), which combines passion fruit, lemon, cumaru and Lillet, a wine-based aperitif.

Giro Bar
At the trendy bar in Pinheiros, the Moscow mule gets a reinterpretation made with jambu cachaça, combined with lemon, sugar and ginger foam. Called jambu mule, it costs R$36. Another original option is Quero Quero (R$32), which includes cachaça, passion fruit with rapadura, lemon and basil.

Jiquitaia
Cachaça is the star of the drinks menu at the Brazilian food restaurant, one of those responsible for popularizing the spirit in the city. One of the house’s classics is the cashew friend (R$ 37), prepared with Princesa Isabel cachaça, cashew jam and lemon. There is also a selection of the distillate made by owner Nina Bastos to taste in doses.

The restaurant by Bahian chef Rodrigo Freire highlights different types of cachaça in signature drinks such as Madame Satã, prepared with white Batista cachaça infused with coffee, Campari and red vermouth. The cashew brother takes the distillate with cashew, clove lemon and cashew jam, carbonated with mint. Both cost R$44. The restaurant’s speakeasy, Nada, also offers options with the spirit.

São Conrado
Mixologist Laércio Zulu is responsible for the drinks menu at the bar with a Rio atmosphere. Zulu is the author of banzeiro, a cocktail that also helped to popularize cachaça beyond caipirinha. The recipe is prepared with the distillate stored in amburana wood, red wine, lemon, sugar and ginger foam and costs R$ 32.90.
