Bacon with honey and pepper

Difficulty level: Easy
Preparation time: up to half an hour
Performance: 3 servings

Ingredients:

  • 6 slices of bacon
  • 1 tablespoon of honey
  • 2 tablespoons of water
  • 3 pinches of red pepper or hot paprika

Method of preparation:

  • Preheat the oven to 180ºC (medium temperature)
  • Dissolve the honey in two tablespoons of water and brush the liquid on the bacon slices.
  • Then sprinkle the pepperoni pepper or spicy paprika over the slices.
  • Place on a wire rack, with a baking sheet underneath, to catch the fat that will drip from the bacon (if necessary, use the oven rack)
  • Bake for 10 minutes or until slices are golden brown.
  • Serve in an American glass, with parchment paper inside.

Spaghetti Alla Carbornara

Recipe by chef Aldo Teixeira from the Forchetta D’Oro restaurant.

Performance: 2 servings

Ingredients:

  • 200 g of spaghetti
  • ½ tablespoon olive oil
  • 100 grams pancetta (or bacon) cut into strands
  • 4 egg yolks
  • 50 ml of water
  • 70 grams of Pecorino Romano cheese
  • Pinch of black pepper
  • Salt to taste (remember the pancetta is already salty)

Method of preparation:

  • In a pan with abundant boiling water, cook the pasta until it reaches the desired consistency. In a skillet put the olive oil, the pancetta (bacon) and lead to the low fire until it starts to release the fat. Fry it until it turns slightly golden. Reserve.
  • In a bowl beat the egg yolks with a fork, add the water, cheese and pepper. Reserve.
  • Drain the al dente spaghetti and add it to the skillet with the bacon, add the broth and stir constantly until it thickens. Serve immediately.
