A reference grill in Brazil, Cassio Cruz gave tips to help Li Jingliang make a quality barbecue
Before having his fight against Michael Chiesa scheduled for UFC 287, on April 8, in Florida, Chinese Li Jingliang challenged the competitors of the welterweight division by inviting them to a barbecue.
The cook Cássio Cruz, specialized in barbecue, at the request of our reporter, gave some tips that can help the Chinese fighter to make a very high quality barbecue after the fight.
“The first step is to understand that barbecue is not just meat, but a whole technique of making roasts on the coals. But, as the subject is meat, then I recommend, in addition to the picanha; cuts such as Denver steak, shoulder steak, tomahawk and Fiorentina steak as red meat options. Poultry, pork, lamb and sausages can also be part of the moment, as well as vegetables”, says the grill
The specialist emphasizes that it is also necessary to have knowledge about how to make each cut of meat and, certainly, how to season the protagonist of the event.
“A good tip for beef cuts is to salt them with parrilla salt after roasting. For grilled vegetables, seasonings are essential and indicate some aromatic herbs such as thyme, rosemary, sage, fresh oregano and basil, which together with olive oil, salt and black pepper complement the flavor and give a unique perfume”, he concludes.
It is worth remembering that this was neither the first nor the most famous invitation to a barbecue involving UFC fighters. In 2012, Brazilian Anderson Silva made the same invitation to challenger Chael Sonnen shortly after knocking him out.
