Also known as ‘Amazonian caviar’, the item is among the highlights in the production of the local primary sector

Manaus (AM) – According to Law No. 6,794/24, Uarini flour is now Intangible Cultural Heritage of the State of Amazonas. A prominent figure in family farming in Amazonas, the production of the food item is encouraged by the Institute for Sustainable Agricultural and Forestry Development of the State of Amazonas (Idam).

Currently, the state has more than 70 thousand family farmers and rural producers who, among other crops, are dedicated to producing food for subsistence and commercialization. The production of the item in the state is 154.1 thousand tons of flour from the water categories, Uarini’s drought is included, according to Idam’s Activity Report (RAT) for the year 2023.

For Idam’s CEO, Vanderlei Alvino, the emphasis given to the food item is understandable and deserved. “Widely known, also like Amazonian caviar, Uarini flour, in addition to being a ‘darling’ in the basic food basket of Amazonians, is a source of employment and income for thousands of family farmers, that is, it feeds the population and is one of the -heads of the Amazonian primary sector”, he said.

The president also highlighted that the institute has spared no effort in strengthening the production of flour of all types in Amazonas, and this includes that of Uarini. “It is essential work developed by Ater, which aims to boost cassava production and guarantee higher quality for the various types of flour, such as Uarini,” he reported.

The flour’s raw material is cassava, whose production is also encouraged by Idam and which, in 2023, totaled 168.4 thousand tons. Among the municipalities that stand out in root production, according to the RAT, are Manacapuru (14.4 thousand tons), Tefé (14 thousand tons) and Manicoré (7.2 thousand tons). The crop also benefits from the Priority Project (PP), which serves approximately three thousand rural producers.

The PP intensifies the assistance offered to family farmers, with training courses, use of new technologies, use of the productivity trio (choice of handle, spacing and cleaning of the area), implementation of Demonstration Units and Observation Units, among other methods.

The objective of the PP, according to the Plant Production Manager (GPV), Luiz Herval, is to help family farmers improve the productivity of cassava and also products (such as flour) and by-products originating from the root.

“Idam has been following new technologies aimed at crops produced in the state and, with this, training technicians and rural producers to carry out their work in an increasingly more effective way. This happens through PP’s, such as cassava, implementation of Demonstration Units (UD) and Field Day, initiatives that bring more knowledge about new technologies to producers”, assessed the manager.
