It’s not always easy to get the right approach (or the recipe) when preparing some vegetables, such as zucchini.
You need to find an element that will help add flavor — which, in the case of chef Heloisa Bacellar’s recipe, is a farofinha made from bread, garlic and cheese.
The preparation, very easy, takes a little over an hour — but 45 minutes in the oven. See how to do it below.
Oven golden zucchini recipe
Servings: 4
Total time: 1h15 (45 minutes in the oven)
Ingredients
- 1 clove of grated garlic
- ¼ cup (tea) grated Parmesan cheese (50 g)
- 1/2 cup crumbled stale bread
- 2 medium zucchini, washed and peeled
- Oil
- Salt and black pepper
Preparation
- Heat the oven to 180ºC (medium)
- Separate a medium refractory that accommodates the slices in one layer and grease with olive oil and set aside.
- In a small bowl, mix the garlic, cheese, bread, salt and black pepper. Add olive oil little by little and crumble until you get a loose but moist crumb. Reserve
- Cut the zucchini into slices of approximately 1 cm and place in a large bowl. Season well with salt, black pepper, and drizzle with olive oil to coat everything. Taste to check the salt.
- Place the zucchini slices overlapping in the refractory and spread the breadcrumbs on top.
- Bake for 15 minutes. Reduce the temperature to 160ºC (medium-low) and leave it in the oven for around 30 minutes, until the slices are soft and the crust is golden.
- Remove from oven and serve.
