Chef André Saburó Matsumoto, from the award-winning Quina do Futuro restaurant, in Recife, Pernambuco, is in town for two dinners to be held today, the 19th, and tomorrow, at the Nōsu restaurant, located in Santana, in the North Zone of São Paulo. A good opportunity to get to know or miss the cuisine of this renowned chef.
Saburó, one of the greatest experts in the country when it comes to tuna, promises a night of immersion in Japanese cuisine with some northeastern touches, such as sun tuna with yam mousseline and curd cheese, shiso farofa and caramelized onions, a dish where the techniques and ingredients of both cuisines come together resulting in a sublime dish.
The menu will also include tuna tartare with Yaguara lardo and ponzu sauce; tuna shoyuzuke with dashi tucupi, miso aioli, mix of sprouts and chips with nori powder; clarified miso with smoked prawns in bancha, mushrooms and leeks, as well as a palette of sushi made from different parts of tuna.
