Since last Wednesday (1), passengers on Latam international flights have had a new lunch (or dinner) option on board: the pantaneiro painted in baru crust, by Cuiabá chef Ariani Malouf.
Served with plantain and coconut rice, the dish is part of the executive and economy class menus on the company’s long-haul flights (more than seven hours).
Malouf’s dish is the fourth in the Sabor à Brasileira series, which has been serving dishes from female chefs from all regions of the country since February. The menu includes Baião de Dois ao Mar, by Bahian chef Nara Amaral, who inaugurated the series; Galinhada das Deusas, by chef Manuelle Ferraz, and Amazônia Encantada, by chef Débora Shornik. The project reinforces the wave of airlines recruiting chefs to improve the image of airline food.
Within the series, Malouf represents the central-western region of Brazil. Born in Cuiabá (MT) and trained at Le Cordon Bleu, in Paris, she runs Mahalo Cozinha Criativa, one of the best restaurants in the region, famous for delivering contemporary cuisine that values regional ingredients and the inventive fusion of flavors.
According to the airline, all dishes are paired with a wine list designed by Héctor Vergara, the only Master Sommelier in Latin America, who analyzed more than 500 options until arriving at a list that highlights the flavors of South America.
“Inflight service is one of the points of contact where we can have a closer exchange with the customer and demonstrate its importance by serving a good meal”, says Paulo Miranda, Vice President of Customers at LATAM Airlines Group. “We take advantage of this moment to take the name of Brazilian women to the world through elaborate dishes that represent the richness of Brazilian cuisine at a high level.”
