New burger imitates beef texture with vegetable protein – 02/26/2024 – Food

I tried the new vegan burger from Brazilian foodtech Fazenda do Futuro, launched in January. Made with soy and pea proteins, Burger 4.0 imitates the texture and flavors of beef.

The product, which is in its fourth version, is starting to be sold frozen in national chains such as Carrefour and Pão de Açúcar and should be integrated into snacks at Futuro Station, a dark kitchen managed by the company in SP.

I prepared the vegan version at home as I would the beef version, seasoning with salt and pepper. As a side dish, I added caramelized onions, leaves, tomatoes and some condiments.

In the end, inside the bread, the product had a texture similar to its beef equivalent. The vegetable meat was firm, but not tough. It maintained pleasant moisture, reminiscent of the liquid inside traditional burgers.

On the palate, there was a savory fat and taste reminiscent of the beef version, but to a lesser extent than the texture.

The aroma didn’t remind me so much of beef, but it wasn’t unpleasant. It was a meal that didn’t seem artificial and could be an alternative for those who want to reduce their consumption of red meat in snacks, but miss the animal flavor and texture.

What’s in the burger: water, protein preparation (textured soy protein, isolated soy protein and pea protein), vegetable fat, salt, beetroot powder, dextrose, onion powder, natural flavor and methylcellulose stabilizer.

Vegetable meat snack recipe

Ingredients

  • 1 vegetable protein burger
  • Hamburger bread
  • Washed watercress leaves
  • Thin tomato slices
  • 1 onion
  • Soy sauce
  • 1 slice of cheddar cheese
  • 2 teaspoons of sugar
  • Ketchup
  • Mustard

How to make
1. Before preparing it, the product needs to thaw in the refrigerator. It’s worth taking it out of the freezer the day before the day of the meal.

2. Then, it’s time to season the burger. Salt and black pepper are enough to add flavor, but other herbs can be included in the package.

3. To make the caramelized onion, cut everything into small cubes and pour into a pan with olive oil. When they are golden, add soy sauce. Let it reduce and add sugar to caramelize. Reserve.

4. In a heated frying pan, add olive oil and carefully place the burger. As it is a little soft, it is better to use a spatula.

5. Let it fry for five minutes on the same side, which allows the Maillard reactions to take place, which brown and flavor the food by transforming amino acids.

6. Using the spatula, flip the burger to continue the process. As long as both sides are the same color, similar to a beef burger, it’s ready. Now all that’s left to do is place the slice of cheese on top and let it melt.

7. Before assembling the snack, seal the bread with olive oil and then add a spoonful of mayonnaise to the base.
