The special series of reports was designed to make the routine of preparing food more practical — when it comes to buying ingredients, choosing recipes or freezing food.
Below, see the CozinhAÍ recipe adapted by chef Maurício Lopes, from Escola Wilma Kövesi de Cozinha. It is made with garam masala, a mixture of dry spices typical of India, but you can make it with whatever combination you like best.
Roasted thigh with garam masala
Ingredients
- Roasted thigh with garam masala
- 4 chicken thighs
- 1 lemon juice
- 2 tablespoons of garam masala
- 2 tablespoons of olive oil
- 2 tablespoons of honey |
- salt
Preparation
- Preheat the oven to 180°C for 30 minutes
- In a bowl, mix the honey, olive oil, garam masala, lemon juice and salt. Leave the chicken to marinate in this mixture for about 3 hours for more flavor.
- If you don’t have time, season the chicken with salt, pepper and lemon and brush with garam masala sauce every seven minutes (use a brush or spoon)
- To check if it’s ready, place it on a white plate and pierce it with a fork. If the liquid coming out of the cut is translucent, it is in the correct spot
