Learn cashew caipirinha recipe from chef Bel Coelho – 09/25/2023 – Food

Brazilian chefs are increasingly concerned with valuing ingredients that symbolize our culture, ancestry and hospitality. This is what guides the work of chef Bel Coelho, at the helm of Cuia Café e Restaurante since 2020.

Therefore, together with bartender Pri Okino, Coelho teaches the cashew caipirinha recipe served at Cuia. In addition to fresh fruits and cachaça, it is made with a sugar and ginger syrup, which makes it easier to dose and dilute.

In case of lack of syrup, the drink can be sweetened with sugar, which must be macerated with the fruits. Another tip is to choose a lemon with a thinner, softer skin, because it has more juice. See the step by step.

CASHEW AND LEMON CAIPIRINHA

Performance: two portions
Preparation time: 25 minutes

Ingredients

For the ginger and sugar syrup

  • 250 g ginger
  • 500ml water
  • 500 g sugar

For the caipirinha

  • 2 cashews
  • 1 lemon
  • 40 ml ginger syrup
  • 100 ml of cachaça
  • Ice to taste

Preparation

  • First prepare the syrup. Peel and chop the ginger. Blend with water and strain. In a pan, heat this juice and when it boils, dissolve the sugar. Reserve
  • Now make the caipirinha. On a cutting board, cut the ends of the lemon, then lengthwise and then into half moons. Place in glasses
  • Cut the cashew cap, set aside. With a knife, divide the cashew in half, then into half moons and add to the glass. Muddle the lemon and cashew, add the ginger syrup
  • Pour in the ice and, lastly, the cachaça. Using a ballerina spoon, stir thoroughly to mix the syrup and fruit well.
