That we exude cultural diversity and flavors in our gastronomy is nothing new. But there are those dishes that occupy the center of the Brazilian table: feijoada, which is a symbol of Brazil around the world, or that crispy crackling that complements any preparation – and so many other delicacies that make up our regional Brazilian cuisine.

Feijoada, Crackling and Brazilian Regional Cuisine from the Popular Flavor stage of the 2023 Bom Gourmet Award, presented by Gold Food Service. They were the most nominated by people from Curitiba and can receive votes until July 11th on the Award’s website.

Crackling

The new bar was founded in October 2021 by chef Mauricio Fontana in partnership with partner Edna Ferreira, his wife. Both had already gone through other ventures, but decided to focus their energies on Jeep Bar CWB. The chef signs the house menu, which highlights bar food, especially crackling rolls, bread with dumplings and jaguar meat. The dish building varies between R$35 and R$65.

The bar and brewery was born as a physical space in November 2022, but the brewery has been operating since 2018. Beer production emerged to follow up on the beers that were produced by grandmother Bernadete. Now, the team is keen to add a Brazilian touch to the recipes. One of the highlights among the beers is the Camu-camu sour, a fruit from the Amazon that is still not very popular outside the region. As for food, the house’s flagship is crackling, the most ordered dish, which costs R$20.

In 2009, José de Araújo Netto and Marcus Araújo, father and son, decided to found the bar with the proposal to bring together traditional bar snacks from all over the country in a colorful environment as in the interior parties. The establishment maintains the essence and traditions of a “root” bar, “a good dirty glass bar”, as they say. Netto is responsible for the menu, which specializes in portions and snacks. The flagship is the dirty steak: a portion of rump with dark beer sauce and bacon, served with boiled cassava, fried or potatoes, and French bread. The crackling is also a highlight of the house, especially the roll.

Founded by chef Daniella and her son Filipe Tavarnaro, the duo combined their experience in the events business with Daniella’s passion for cooking – and thus, Porkito was born in 2020. The idea was to set up a restaurant that sold sandwiches made with meat shredded, in addition to traditional hamburgers. The appreciation for pork was the inspiration for the name. The menu is signed by the chef and its specialties are feijoada and crackling – which, unlike the traditional dish, is made with pancetta, not bacon. Among the sandwiches, the shredded sandwich stands out. Prices vary between R$19.90 and R$46.90.

At the end of January this year, businessman Beto Madalosso launched his newest venture: a bar that serves various snacks, draft beer, bottled beer, caipirinhas and offers a variety of 40 types of cachaça. Wellington Almeida is the chef responsible for a menu that includes oxtail dumplings, cod marinade, creamy crab and sambiquira skewers, which are among the highlights of the house, in addition to cod bolovo. The price of snacks varies between R$18 and R$33.

Brazilian Regional Cuisine

Founded in April 2009, the restaurant focuses on Brazilian food. Commanded by chefs Chef Anderson Laffayete and Marcello Simões, the kitchen presents everyday ingredients in a different version, whether in the presentation or in the preparation techniques. The flagship of the house is feijoada, served on Saturdays. On Sundays, barreado is the focus, in addition to regional classics from other regions of the country. At night, the highlight is the bar food. In the cocktail menu, the frozen caipirinha, which has cashew pulp, strawberries, blackberries, mangoes, pink pepper and cachaça, is a hit.

The restaurant was founded in 2015 with a focus on food from Minas Gerais. Previously with a space in Alto da XV, it moved to its current address, at Hugo Lange, in 2018. With a kitchen led by Minas Gerais chef Maria Eliza Guimarães, the menu features regional dishes with a homemade proposal. The highlight is the pork ribs, which are served with guava sauce. In addition to this, dishes like barreado, tropeiro beans and fried polenta call attention to the per-kilo buffet, which is standard at the house, which only serves in person.

Mineira Gostosa was founded in 1981 in downtown Curitiba with the aim of bringing together lovers of Minas Gerais cuisine. With a rustic atmosphere, the owner of the house Eduardo Dalcomuni intends to offer customers a trip to the interior of Minas Gerais. With traditional dishes, served on a wood stove, the menu emphasizes fresh ingredients in recipes passed down from generation to generation. The flagship of the house is the crackling pernil. Other specialties are crackling, feijoada, tripe and oxtail. All served as an all-you-can-eat buffet with dessert.

In 2016, chef Fredy Ferreira, his wife Lívia Farah and his partner at the time Heitor Humberto teamed up to transform a historic coat in Largo da Ordem into a restaurant serving coastal food from Paraná, a tribute to Lívia’s ancestry. The name pays homage to his grandmother, great-grandmother and great-great-grandmother, who were born in Guarçouba and Paranaguá. The contemporary cuisine dishes, signed by Ferreira, take ingredients such as seafood, manioc flour, plantain, peach palm and cataia. Highlights on the menu are seafood preparations and grilled fish, in addition to barreado. The value of the dishes range from R$45 to R$82.

Mahá was founded nine months ago based on the common principles of two friends, Hannah and Mari, who met in the kitchen. The goal is to provide a moment of experience with food and space. For ingredients, it has a partnership with the central cooperative for agrarian reform, in addition to having suppliers of organic products and local producers. Chef Hannah Correia de Lima signs the menu, which highlights the pork belly with creamy plantain rice. The average value of the dishes is R$50.

Feijoada

The establishment began its history in 2013, under the name of Quintal da Maria. Over the years, it has established itself as one of the main samba houses in Curitiba and, during the pandemic, it changed direction, becoming O Tal do Quintal. That’s when the feijoada (R$59), signed by chef Ary Aires Junior, started to be included among the highlights of the menu. The dish also inspired the feijoada fritter (R$33), served in eight pieces. The main objective of the house is to keep the samba culture alive in the city, bringing artists from all over Brazil to perform in the city.

It was inspired by football that the partners Rodrigo Benato and Wagner Ferro decided to found the bar, in 2018. The house broadcasts live games and has a themed menu. The name itself is inspired by a game pass. With a kitchen led by Benato, the specialty of the house is feijoada, which is served with more than 20 side dishes, and includes dessert.

The restaurant, located in a rustic house near Parque São Lourenço, was opened on October 24, 1987 by Otávio Sbalqueiro. The recipes from have stayed true to the taste of home cooking ever since. Specialized in Brazilian cuisine, the restaurant offers à la carte service. The highlight of the menu is feijoada, prepared by the owner and his wife, Marta Sbalqueiro. There are also other dishes, such as rump with onions, breaded fish fillet, grilled fish fillet and fish moqueca. Among the snacks are bean broth, french fries, cassava, bacon, shrimp croquettes and crab cakes. The average price of the dishes is R$ 125, which serves two people.

With 40 years of history, Puinas offers a menu with more than 100 options, highlighting the feijoada Dona Cacilda (R$69.90), signed by chef Cleber Tulio, son of Cacilda. The dish is served on Saturdays in iron pots, with several options for side dishes and appetizers. Among them, cassava bread, potato chips, pork sausage and pork shoulder roasted for eight hours. The kitchen is led by chef Wagner Ferro. The restaurant also has live music with Samba de Bamba.

In addition, they have snacks, such as termite cupcake with cream cheese, the house’s best seller, and cabotiá pumpkin cupcake with dried meat. There are more than 20 options for caipirinha and draft beer with nitrogen. Prices range from R$32 to R$88. Caipirinhas from R$28.
