Manaus (AM) – The Centro Unit of Senac in Amazonas (Senac-AM) hosted, yesterday morning (5) a gastronomy class-show with the presence of renowned French chef Erick Jacquin. In all, 80 participants – including culinary specialists, students and representatives of partner organizations – participated in the activity.

With the collaboration of Senac-AM, the teaching of the show-class officially opened the cultural event of integrated arts #SouManaus Passo a Paço, organized by the City of Manaus, with the intermediary of the Municipal Foundation of Culture, Tourism and Events (Manauscult).

The show-class began with the opening of a conversation circle with chef Erick Jacquin. For more than two hours, the guest and the participants exchanged experiences and shared experiences about culinary challenges, such as ways of preparing food to good restaurant management practices.

Professional qualification

Jacquin, who gained popularity on TV as a judge and presenter of the programs “MasterChef Brasil” and “Pesadelo na Cozinha”, emphasized that France and Brazil are references in world gastronomy. He also highlighted that the exchange of knowledge, especially by those who will follow a career in gastronomy, is essential for a successful trajectory.

“It was a pleasure to have been invited and to participate in this wonderful chat, even more so within a school, because I believe that studying is very important. Studying is essential to start in this profession. The younger you start studying, the better it is”,

According to Senac-AM’s Director of Education, Ellen Castro, Jacquin’s speech about the role of educational qualification goes against the institution’s proposal as a trainer of future professionals for the job market.

“Senac stands out as a reference school in the field of gastronomy. The students present were able to honor, in a suitable space, a chef with a structure of the fifth magnitude, being able to speak and give them guidance on the career in their lives. So, it is a collaboration for their career and for them to reflect on”,

Regional cuisine as a highlight

During the class-show, the guests were able to try a menu prepared by the gastronomy students of Faculdade Senac-AM with the collaboration of chef Jacquin, in a union of the Amazonian regional cuisine with the French one. Pirarucu, tucupi, jambu and champagne were some of the items used in the recipes served.

One of the participants, the president of the Brazilian Association of the Hotel Industry of Amazonas (ABIH-AM), Roberto Bulbol classified Jacquin’s teaching of the show-class as excellent, and said that actions like this elevate Amazonian gastronomy.

“Jacquin is a highly regarded person throughout Brazil and the world. He was also able to experience Amazonian spices and indigenous cuisine. So, being able to show all this exotic cuisine that we have is important. When you arrive in any state, what do you want to do? You always want to try the regional foods of that region. And Manaus already has this tradition of fish, regional restaurants, being very important and well attended, and has a lot to offer”,

he said.

For the Director-President of Manauscult, Osvaldo Cardoso, who highlighted the confidence of Senac-AM and the long-standing institutional partner, this exchange of experiences in gastronomy will expand the cultural baggage of the new chefs.

“Senac, above all, has done a successful job in professional training and in its social work. This partnership between Manaus City Hall and Senac-AM helps train new chefs. Jacquin has been bringing this cuisine to Brazil for a long time. Culture grows in diversity and it is these people who will cook in the future”,
