Instant noodles, also called ramen noodles, have become a pop and global food. It was created in Japan on August 25, 1958 by Momofuku Ando, ​​founder of Nissin, a date that became known as International Noodles Day.

It emerged to simulate ramen, a dish in which noodles are served with a robust broth, protein and some side dishes. The noodle, in its production process, is fried to make it last longer and is seasoned with a lot of salt. When placed in boiling water, it cooks in three minutes. This practicality in preparation is what most attracts those who do not want or cannot cook.

People eat more and more of this food. More than 121.2 billion noodles were consumed worldwide in 2022, according to the World Instant Noodle Association (WINA). This is the highest number recorded since the beginning of the ranking, in 2018. Brazil ranks 10th, with 2.8 billion packages consumed.

There are people who are not limited to the content in the bag. Some add egg yolk to make the broth more creamy or finish with chives.

A video by chef Erick Jacquin in which he talks about how to make perfect ramen noodles during a podcast interview has gone viral on social media. Jacquin says it’s not made in a pot, it’s made in a frying pan. After adding the noodles to the boiling water, he stirs to loosen the dough and adds butter, in addition to adding lemon zest. The chef even says that he puts a spoonful of caviar on top.

  • 1 tbsp hondashi (Japanese seasoning)

  • 2 packets of instant noodles

Method of preparation:

  • Fry the mussels and squid in butter for a minute
  • Add the moyache, broccoli, carrots and pepper little by little, bringing them to a simmering point, seasoning little by little. Reserve
  • Cook the instant noodles for a minute or until they come apart, reaching the point of al dente noodles.
  • Strain the pasta and gently mix it with the stews and serve

Preparation time: up to half an hour

Performance: a portion

To flambé, the ideal is to make the noodles in a frying pan with a low edge. Pour the brandy over the recipe. Carefully tip the pan slightly so that the broth comes into contact with the stove flame. The fire will cease when the alcohol runs out.

Ingredients:

  • 1 package of beef or chicken noodles
  • 1 pinch of nutmeg
  • 2 tablespoons light cream cheese
  • 1 glass of cognac
  • 1 portion Parmesan cheese grated to taste

Method of preparation:

  • Cook the noodles according to package instructions. When the water is half full, add the nutmeg and the curd. Mix gently and, just before taking it off the heat, flambe it with the cognac. Serve with grated parmesan on top.
