Cafeteria in SP serves iced coffee from a draft tap – 02/06/2024 – Café na Prensa

“Empirical” means that which is based on experience and observation. And that’s how Guilherme Duarte conceived a drink that is the great differentiator of his café, Empírico Café.

It is a coffee prepared by infusing the powder in warm water, then nitrogen, stored in barrels and extracted cold from taps, such as those used to serve draft beer.

The result is a drink that visually resembles a dark draft beer, with a small layer of foam on top. As it consists only of coffee – without sugar or any other additives – it is light and not very sweet – just the natural sweetness of the coffee itself. Served in a tall 200 ml glass, it costs R$10.

The establishment is located in an old exposed brick house in the Higienópolis neighborhood, central region of São Paulo, almost in front of the Higienópolis-Mackenzie Metro station.

Duarte says that, according to the property owner, the mansion is over a hundred years old. He states that he has already received elderly customers who attest that the building is indeed old. A neighbor says he remembers that in the 1950s the place housed the neighborhood grocery store.

With good natural lighting, which enters through the front doors and a large wooden side window, the place has just one counter and three tables.

In addition to the aforementioned iced coffee, the establishment serves other classic caffeinated drinks, with beans from different regions of Brazil, always roasted and ground in-house.

From the hands of experienced baristas, with experience in renowned coffee shops, such as Pato Rei, come espressos (R$ 8), ristrettos (shorter and more intense), cappuccinos and strains, as well as options that use other ingredients, such as mocha (with chocolate syrup) and coffee cream (with whipped cream and natural vanilla syrup).

To eat, the cheese bread made with cheese from the Atalaia farm (R$ 10) has been the restaurant’s biggest success since its opening in September 2023. Duarte says he receives consumers from Minas Gerais – as they are keen to point out – who are impressed. with product quality.

There are also sweet options, such as the grated carrot cake with spices (R$ 18) and the 70% cocoa Amazonian chocolate cookie (R$ 13). With the exception of the vegan croissant and pain au chocolat, the food is made in-house.
