One of the main recipes on the Brazilian table, beans are a popular and easy-to-make dish. Although many people are still afraid of facing the pressure cooker, it can be done in two ways, both under pressure and outside of it.

The dish takes a maximum of an hour and a half to prepare, including preparation and cooking time. Beans are simple, and can use different ingredients when seasoning, depending on the creativity of the cook. It is possible to add options such as bacon, pepperoni sausage, celery, among others, to enhance the flavor.

Bean recipe

Ingredients

  • 1 large diced onion (180g)

  • 1 clove of minced garlic

  • 2 and ½ cups of raw beans (striped, black, jalo, carioquinha, ball, pink – 500g)

  • 1 bay leaf

  • Vegetable oil

  • salt

Method of preparation

  • Wash the grains well and place in the pressure cooker.

  • Cover with water and heat without covering. Let it boil for 1 minute, discard the water and cover with clean water, covering the grains by three fingers.

  • Cover the pan and cook the beans for an hour until the beans are soft. Under pressure, cook for 30 minutes.

  • When the beans are cooked, separate part to sauté and serve immediately. Let the rest cool, store it uncooked in the refrigerator for up to 3 days and sauté whenever you want.

Sauteing the Beans

  • Water the bottom of a medium pan with a little oil and lightly brown the onion. Add the garlic and wait for it to become fragrant.

  • Add the cooked beans with the cooking broth, the bay leaf, mix well, crush some grains to help thicken the broth and add a little salt.

  • Let the beans simmer over low heat for 10 to 15 minutes, until they are very tasty and have a thick broth. Adjust the salt and serve immediately.
