I tried to make a pink Barbie food. I swear I tried it, I thought it would be fun.

We know, however, that failure is the most likely consequence of the attempt. And I failed twice. The creamy and pink sauce of the gnocchi curdled. I tried again. And the soup that was supposed to be pink came out something purplish, something gray. I thought about throwing in the towel.

Then I realized that pink foods are not so foreign to my usual repertoire. Grilled meat, man. When done to the point, it achieves a rosy hue that any Barbie would approve of.

Steak with onions is one of my favorite foods in its meandering simplicity. There are just two ingredients –or five, if you insist on adding salt, pepper and water to the bill– and an endless number of possibilities for something to go wrong.

The meat, obviously, needs to be good. Filet mignon is ok, but the sirloin cuts speak more to my stomach. I used a piece of rib-eye steak – also known as ancho steak, entrecôte or ribeye, depending on the nationality of the dish.

You must leave the meat at room temperature for the heat of the flame to work most effectively.

There are those who say that the steak needs to be seasoned immediately before going to the fire, or even after it is ready. I disagree.

I have already read enough on the subject and applied what I read in practice. Season the meat as soon as you take it out of the fridge, like an hour before grilling. The salting is more uniform, and the loss of water is irrelevant.

There are those who like thin steak. I like high steak. There are those who prefer well-done meat. Here it is to the point, maybe a little short of it, with the center in radiant Barbie pink. Perfection, you see, is subjective: this is my perfect steak, yours might be totally different.

The equipment is very important. The ideal is to use a cast iron skillet, which can be subjected to very high temperatures. Do not use a pan with a non-stick coating: you will need to scrape the bottom to make the sauce and toxic substances can be added to this game.

Did I say sauce? Yes, it is a steak with onion sauce, different from a steak with grilled onions. You brown the onion in the pan with the meat, then add water and scrape the bottom to make a dark broth.

You can use soy sauce, wine, or another liquid to season this sauce. But it certainly doesn’t have to.

It’s a very simple dish.

PERFECT ONECY SMOOTH STEAK

Performance: 2 servings

Difficulty: easy

Ingredients

500 g of rib fillet

1 sliced ​​onion

Salt and black pepper to taste

Way of doing

1. Remove the meat from the refrigerator. Cut into steaks two fingers thick. Season with salt and pepper. Leave at room temperature for 1 hour.

2. Heat an iron skillet over high heat for 5 minutes.

3. Grill the steaks for 5 minutes on each side. Reserve.

4. In the same skillet, grill the onion for 2 minutes, stirring constantly. Throw in ½ cup of water and scrape the bottom of the pan with a spatula. Leave it in the fire until the sauce reduces and the onion is soft (add more water if necessary). Serve the steak with the onion sauce.
