The wine Ponta dos Ganchos is exclusive to the resort of the same name. The drink is produced by Fattoria Lavaccio in Tuscany, Italy, and is an organic Super Tuscan. According to German Bergondo, head sommelier from the hotel, the wine is a mixture of Merlot (60%) and Syrah (40%). After the vineyards are harvested, at the end of September, vinification begins with a gentle destemming of the grapes. Fermentation and maceration take place at a controlled temperature, in French oak barrels, for 25 days. The blend matures after 12 months in barrels.

“After that period, the blend was placed in new French barrels to age for 24 months. After this phase, it was bottled and finished with a refining process for another 18 months. From the 2016 vintage, we received 1000 exclusive bottles”, says Bergondo. About the attributes of the Ponta dos Ganchos wine, the sommelier highlights the deep plum tone, the velvety texture and the fresh and concentrated aromas of ripe red and black fruits, tobacco and peppers.

In celebration of the hotel’s 20th anniversary, the wine list was also expanded. 180 bottles of Barollo (DOC), from the 2011 vintage, were included. The wine is composed 100% of nebbiolo grapes, natural from the Piedmont region of Italy.

As stated by Fernanda Makhoul, marketing and sales director at Ponta dos Ganchos, own production of wines and also of cachaças is artisanal and, for that very reason, small. “The idea of ​​having our own cachaça and wine production meets the desire to provide experiences and tastings that can only be found here in Ponta dos Ganchos”, she explains.
