Mother’s Day: see dulce de leche pave recipe – 05/12/2023 – Food

In addition to running seven establishments, chef Renata Vanzetto is the mother of three children. She, who owns places like Mico and MeGusta, shares on her Instagram account the preparation of sweet or savory dishes, which she calls “rê-ceitas”.
One of the shared recipes is perfect to make on Mother’s Day: pave created by the chef, which intersperses layers of crumbly cake dough and whipped cream with dulce de leche. Dessert takes some time between baking the cake, waiting for it to cool and then cooling the pave, but the process does not require much familiarity with the kitchen – and can be done to surprise mothers this Sunday (14).
WALNUT PAVE WITH SWEET MILK CREAM
Ingredients:
- 250g chopped walnuts
- 6 tablespoons breadcrumbs
- 6 tablespoons of sugar
- 6 eggs
- 1 teaspoon baking soup
- 400g of dulce de leche
- 500ml of sour cream
Way of doing:
- Beat the eggs with the sugar until it becomes whitish and doubles in size.
- Add the breadcrumbs, the nuts and lastly the yeast; mix with a spatula
- Bake in a greased form with oil and breadcrumbs for 30 minutes at 180ºC degrees
- Whip the cream to the point of chantilly
- Incorporate the dulce de leche into the whipped cream
- After letting the cake cool, crumble the dough with your hands.
- Place a layer of crumbled cake on a platter, followed by a layer of whipped cream with dulce de leche. Make another layer of cake and another layer of filling.
- Take to freeze for about two hours and sprinkle cinnamon when serving
