Matcha Pavê, an herbal version of a traditional preparation

You may have heard this name around. Matcha, one of the most consumed herbs in Japan, is the darling of the moment. Made from young green tea leaves, in addition to its medicinal properties, the powder adds a delicate bitterness and herbal touch to recipes made with it.
And this subtlety, considered by many to be complex and elegant, has popularized the herb in Western cuisine. In Brazil, Matcha is already found in cold drinks, drinks, savory dishes and desserts.
And to prove all the versatility of this tea, @thecoffee.jp prepared an exclusive recipe for Pavê de Matcha with white chocolate. A very unusual mix of flavors, which also brings the acidity of strawberries, and is worth trying.

Ingredients
- 4 teaspoons of Matcha powder
- 180 g of white chocolate
- 250 g fresh cream
- 8 pieces of champagne biscuits
- 8 strawberries
Method of preparation
- Chop the chocolate and melt in the microwave every 15 seconds, stirring between intervals.
- Add 3 tablespoons of Matcha and mix well
- Add 2 tablespoons of chilled fresh cream, mix well and set aside
- Beat the rest of the fresh cream until it forms a cream
- Add the cream with Matcha that was reserved and mix
Assembly
- In a cup of hot water (120ml) add the rest of the Matcha
- Mix well and add 60 ml of cold water
- Soak the champagne biscuits, one by one, in the mixture and place them at the bottom of a platter.
- Cover the cookies with the cream
- Take it to the fridge for 4 hours
- Top with halved strawberries and serve.
