Manu Buffara launches book in New York and prepares for new restaurant

Chef Manu Buffara launches her book this Tuesday (25th) in New York “MANU: Recipes and Stories from My Brazil”. The publication is by Phandon publishing house and tells the journey of the chef from Paraná in the world of gastronomy, in addition to presenting 60 recipes never before shared by her.
In 2022, Manu won the title of Best Female Chef in Latin America by the Latam 50Best ranking, attracting even more attention from the world to Curitiba’s gastronomy. In the second half of this year, the chef from Paraná should open the doors of the expected ELLA, the first high-end Brazilian restaurant in New York. The house is located in Chelsea, considered one of the most sophisticated and cool places in the city.
Until ELLA arrives, Manu invites the world to learn a little more about her life and her style of cooking in her book. The publication has a preface by two renowned chefs – Dominique Crenn and Alex Atala (Manu’s mentor) – and proposes a visual narrative.
In the pages of the book, in addition to stories and recipes, the reader will find images of various dishes based on vegetables – a signature of Manu’s cuisine -, and landscapes of the fields and coast of Paraná – where many of the ingredients used come from. by the chef. Throughout the publication, the recipes are presented to the reader as if he were being taken to a dinner at Manu’s restaurant, in Curitiba.
Fermented drinks and iconic dishes that make up the tasting menu are on “MANU: Recipes and Stories from My Brazil”. Among the recipes shared by the chef is Carrot with yeast sauce and cassava and scallop kernels with cashew nut milk and native honey. Two dishes that are signature of the Manu way of cooking: valuing fish and vegetables to the fullest and, above all, always seeking to use local ingredients.
The book “MANU: Recipes and Stories from My Brazil” will be available for purchase on Amazon from this Thursday (27). Although available for the Brazilian market, the publication is only in English. Publisher Phaidon still does not have a forecast of when the book will be officially released in Brazil.
