Manaus restaurants invest in vegetarian and vegan options to win over tourists

Extracting the flavor of fruits and vegetables and combining Amazonian culture with a healthier lifestyle was the choice of restaurants
Manaus (AM) – Food is also a lifestyle. Thinking of conquering the palate of the most diverse tourists, restaurants in Amazonas include vegetarian and vegan dishes with an Amazonian touch on the menu.
Extracting the flavor of fruits and vegetables and combining Amazonian culture with a healthier lifestyle was the option at the Casa da Pamonha restaurant, in the center of Manaus. Chickpea vatapá, vegan feijoada, soy minced meat, lentil roulade, heart of palm fricassê, are just some of the delicacies produced by the space.
According to the owner, Rafael Inocêncio, the company is a pioneer in the vegetarian segment in Manaus.
“It was our commitment to serve differentiated and healthy food. We had a good reception from the public and, with that, we made the change in our cafe menu, also removing all products with animal meat”,
highlighted.

Pizzas can also follow the vegetarian proposal. In the capital of Amazonas, Pizza Crek brought to the menu flavors such as jackfruit meat, margherita and shimeji. The development works daily, from 4 pm, with units in the neighborhoods of Ponta Negra and Parque das Laranjeiras.
Aiming to cater to different audiences, Ancho Steak Burger included vegan and vegetarian dishes on the menu, according to the owner, Gabriel Geraldo.
“To be able to bring options to all ranges of customers, and thus make it possible for people who cannot or do not want to consume meat to have these options, even when they are following groups that consume this type of protein”,
said Gerald.
Among the dishes served at the restaurant, Gabriel highlights the vegetarian risotto with roasted vegetables (ratatouille); mushrooms and Parmesan cheese; and eggplant parmigiana, with buffalo mozzarella, roasted eggplant and basil in pomodoro sauce; the latter being the most requested among the establishment’s customers.
In the hamburger options, Ancho offers two dishes: the Vegan Burger, with eggplant bread, chickpea hamburger, mushrooms, lettuce and guava ketchup; and the Vegetariano Burger, with Australian bread, chickpea burger, mushrooms, mozzarella cream, lettuce and guava ketchup.
“Our regional cuisine has fish as a reference, but it goes far beyond that and it is extremely interesting to demonstrate that we can also include the Amazonian identity with vegan/vegetarian dishes, using items as characteristic as tucumã and açaí, for example”,
pointed out the owner.
