Rice with shrimp serves as a main dish to be served with a leaf salad or as an accompaniment to grilled or fried fish. Also, it’s the perfect recipe to use up your leftover white rice every day.
In the fire, everything happens in a maximum of 15 minutes: it is time to sauté the shrimp in butter with olive oil, onion and garlic, add the white rice ready the day before, wait for it to heat up and finish with the chopped parsley and chives. The most time consuming is chopping the onion, garlic and herbs.

RICE WITH SHRIMP
Performance: 4 servings
Preparation time: 45 minutes
Ingredients
- 25 g of butter
- 1 medium chopped onion
- 1 minced garlic clove
- 500 g medium shrimp cleaned and shelled
- 3 cups cooked white rice
- 3 tablespoons chopped parsley
- Olive oil
- salt
- Black pepper
Preparation
- In a medium pan, heat the butter and a drizzle of olive oil, add the onion and when it starts to brown add the garlic.
- Once fragrant, add the shrimp and keep on the heat for about three minutes, until it is firm and opaque on all sides, but only slightly golden. Add salt and transfer the shrimp to a plate.
- Put another strand of olive oil in the same pan and add the rice. Stir to combine well, but be careful not to break up the grains.
- When the rice is hot, return the shrimp to the pan and stir in the parsley.
- Transfer the rice to a bowl and serve immediately.
