Learn how to prepare Arais, traditional Armenian sandwich

Made with pita bread and a well-seasoned ground beef filling, this is Arais, a typical Armenian sandwich. Crispy on the outside and moist on the inside, this practical snack can even replace dinner on a lazy day. Who shares the revenue with the Good Gourmet is Philco, which invited chef Fernanda Luvezuto (@cheffernanda), finalist of ‘The Taste Brasil’ (GNT) program to teach how to prepare it.
The sandwich is made entirely in a frying pan. To make it work, the important thing is that the pan is non-stick and the cook doesn’t forget to control the stove flame -no high heat here. In her recipe for Arais, Fernanda used the frying pan from Philco’s Définitive line, a brand launch that features RedStone coating.

Ingredients
- 5 medium flatbreads (15 cm in diameter)
- 500g ground duckling
- ½ chopped onion
- 2 tablespoons olive oil
- 1 teaspoon(s) chili pepper
- ¼ teaspoon cinnamon powder
- 1 ½ teaspoon salt
- ½ cup of parsley (chopped)
- 50ml sparkling water (helps to bind the meat and not break it up)
- Olive oil to taste for brushing the bread
- 200g mozzarella cheese or your favorite
Method of preparation
- Season the meat with salt, oil and spices. Add sparkling water. Mix and book.
- Cut the flatbread in half, separate portions of the meat and open it all over the bread
- Leave it thinner and put it in the skillet to brown the meat;
- After 4/5 minutes, turn with the bread side down; complete with plenty of cheese and close the bread.
- Last on the other side of the bread until the cheese melts.
