Farofas are a tradition at Christmas dinner in Brazil, whether to accompany the main dishes or to stuff the birds. Lobozó, a country-inspired stir-fry, is a great and tasty substitute.
The recipe, proposed by chef Gustavo Rodrigues, from the Lobozó restaurant, in São Paulo, uses corn flour and yields up to four portions.
Ingredients

100 g diced bacon, skin removed

100 g fresh sausage, casings removed

50 g roasted peanuts, shelled

300 g flaked corn flour

Salt to taste

75 ml chicken broth (or water)

chopped parsley to finish
Way of doing

In a frying pan, brown the bacon and set aside, discarding the excess fat that has melted.

In the same frying pan, brown the fresh sausage mixture in pieces until completely cooked and drain the excess fat.

Add the fried bacon, add the peanuts, corn flour and salt.

Hydrate with the chicken broth, mix well, finish with the parsley and serve (or use to stuff the roast chicken).
