NORTHEAST MEATBALLS
These meatballs go well with sauce, accompanying rice, on pasta or eaten as an appetizer without the sauce. To make it lighter, instead of using bacon, sauté it in a tablespoon of olive oil and, instead of frying it, bake the meatballs in a non-stick pan.
Time: up to 1 hour
Performance: 16 units
Ingredients:
- 1 kg of dried meat
- 100g of ground bacon
- 2 big onions
- 2 tomatoes (without skin) chopped
- 1 red bell pepper (without skin) chopped
- 1 bunch of parsley
- 1 cup breadcrumbs (tea)
- 4 tablespoons wheat flour
- 1 egg
- 1 can of tomato sauce
Preparation:
- Soak the dried meat in water the day before. Cook for an hour or until softened and finely chopped.
- Make a stew with the bacon, onion, tomato, bell pepper and parsley. Add the dried meat to this stew and let it cook until it is very soft. Remove from the heat, let it cool slightly and incorporate the soaked bread crumbs in the milk and the egg.
- Make the meatballs, dip them in wheat flour and fry them in plenty of oil. Once ready, water them with already heated tomato sauce.
BEAN SOUP
Time: up to 1 hour
Performance: 8 servings
Ingredients:
- 1/2 kg of black beans
- 150g Paio sausage, sliced
- 2 minced garlic cloves
- 2 tablespoons olive oil
- 1/2 kg of pork ribs
- 2 tablespoons minced onion
- 1/2 cup oil
- Salt and pepper to taste
- 4 cups of cracklings
- 4 pieces of bread, cut into slices
Preparation:
- Cook the beans with the paio and garlic already golden in olive oil. Once cooked, blend the beans with the paio and the cooking water in a blender, check the salt and set aside.
- Season the pork ribs with the onion, pepper and salt to taste. Fry in hot oil until browned. Serve the broth very hot in mugs, adding a rib for each portion.
- Accompany with cracklings and slices of French bread.
TUNA SALATE
Recipe from the Spanish restaurant Don Curro, published in the “Avental” section of the column that Joyce Pascowitch kept in Folha de S. Paulo for more than a decade. A glass of Marquês de Riscal white wine and an extra dose of olive oil, both Spanish, are the perfect accompaniments to this salad.

Ingredients:
- 150g fresh tuna, cooked in cubes

- three flat lettuce leaves
