The largest survey on food away from home ever carried out with consumers in Brazil revealed the characteristics considered most important when deciding on a bar or restaurant. Surprisingly, the taste of the food and the price of the dish are not the most determining aspects when choosing.

With more than 6 thousand respondents in all regions of the country, the survey carried out by Sebrae in partnership with the Brazilian Association of Bars and Restaurants (Abrasel) showed that cleanliness and hygiene in the facilities (32.4%), cordiality, education and knowledge of attendants (17%) and the establishment’s environment (12.4%) are the most preponderant factors.

The research also shows that, in the daily lives of those who frequent bars and restaurants, the majority (93%) choose to consume meals and drinks in the establishment itself and 66.3% say they eat out two to five times a month. When asked about the biggest motivations for leaving home, respondents were able to choose multiple answers and their favorites were: going to a celebration/party (76.6%) and talking/having fun with friends (76.3%).

For the president of Abrasel, Paulo Solmucci, the research results will bring significant contributions to the decision-making processes of entrepreneurs in the sector and public policy makers.

The president of Sebrae, Décio Lima, agrees that the research reveals important directions for entrepreneurs working in the food away from home sector.

“This is one of the most important segments of small businesses. They are entrepreneurs who work in communities, neighborhoods and large centers, generating jobs and income. Furthermore, they know that innovation and sustainability are essential factors in attracting people looking for leisure time when they leave home to have a meal. This necessarily involves the care and qualification of the entire team”,

Survey numbers

Most important characteristics when choosing a place to eat out:

  • Cleaning and hygiene in facilities: 32.4%;
  • Cordiality, politeness and knowledge of attendants: 17%;
  • Establishment environment: 12.4%;
  • Delicious food: 10.3%;
  • Affordable price: 7.2%.

Consumption habits of Brazilians:

  • On a daily basis, 75.5% of Brazilians eat food prepared at home;
  • When they choose to eat out, 93% eat at the establishment;
  • In general, people visit establishments for leisure reasons, whether to celebrate a special date (76.6%) or to chat and have fun with friends (76.3%).
