Discover Jacó, a new signature restaurant in Vila Madalena – 02/01/2024 – Restaurants

A seasonal signature cuisine, which uses ingredients from small local producers, is the basis of Jacó, a recently opened restaurant in Vila Madalena. The house is one of the most promising debuts this year — or at least one of the most popular, as reservations are sold out.
At the helm of the address is Iago Jacomussi, a 25-year-old chef, with a diploma from Le Cordon Bleu and experience at Evvai, Maní and Michelin-starred restaurants in Portugal and Denmark.
“Even as an intern, you could tell he stood out,” says Luiz Filipe Souza, the chef at Evvai.
Based on this knowledge, Jacomussi created a seasonal menu that seeks to fully use the ingredients. The leek, for example, appears confit in butter and in powdered form, in a dish that costs R$56. The butter used becomes the bernaise sauce that accompanies the vegetable, served with sweet pepper pickles.
The menu follows a São Paulo trend and has no division between starter, main and dessert. The proposal is to share at the table. Thus, in a visit with three or four people, it is possible to taste all 12 recipes listed.
One of the suggestions is roast beef, cooked for five hours, topped with green salsa made with aliche, tarragon and capers (R$62).
First, start with the couvert, a bread produced in partnership with the Assaz bakery, served with butter that mixes pistachios, parmesan and basil — it will soon be available to buy on site.
The bar, run by Argentinean Chula Barmaid together with Denis Almeida, receives the same attention and features elements from the kitchen — both are exposed to the public in the lounge.
This is the case of sweet pepper, used to infuse dill and dry vodka (R$ 39). A refreshing option is the green mint (R$41), which mixes rum, lemon, clarified and mint foam on top.
Before going, the tip is to make a reservation, but there is also service on a first-come, first-served basis.
