Chef André Saburó Matsumoto, from the restaurant Quina do Futuro, in Recife, will be in São Paulo to design the menu for a dinner at Nōsu (r. Maria Curupaiti, 414, Santana).
Saburó, one of the greatest specialists in tuna in the country, prepares dishes that emphasize fish and blend Asian and country cuisine.
At dinner this Monday (19) and Tuesday (20), at 8 pm, recipes will be served such as tuna tartare with lard and ponzu sauce, sun-dried tuna with yam muslin, coalho cheese and shiso farofa and a palette of sushi with different parts of the fish.
