The news in the capital of São Paulo seems to show no sign of rest. This includes well-known names opening new fronts, but also the return of chefs to the gastronomic scene, such as Andrea Kaufmann who returns to her origins with her recently opened Jewish deli in Vila Madalena.

Not far away, in Pinheiros, three renowned chefs got together to open Sororoca, a bar that seeks to explore the diversity of fish on the menu. They are: Marcelo Corrêa Bastos (Lobozó and Jiquitaia) Gustavo Rodrigues (Lobozó) and Thiago Castanho from Pará (formerly from Remanso do Bosque and Remanso do Peixe).

Another bar, Drunks, was opened on the mezzanine of Osso, by Renzo Garibaldi, voted the best meat restaurant by the special The Best of São Paulo Gastronomy – Restaurants, Bars & Kitchen. See below.

AK Delhi
Opened less than a month ago, AK Deli was born to be just for deli. In other words, a place dedicated to takeaway food. “But people want to sit down and eat,” says chef Andrea Kaufmann, who then added tables to the sunny, modern property in Vila Madalena.

When she leaves the kitchen for the dining room, many customers call her by her name, a legacy of her previous restaurants, AK Vila and AK Delicatessen — her first restaurant, dedicated to Jewish cuisine, opened in the late 2000s. Kaufmann returns to her origins at the new address with Mediterranean and Jewish recipes, expanding the culinary community in the city.

It is, perhaps, a little unlikely that someone unfamiliar with this food will immediately order liver pate, marinated tongue or a latke (grated potato pancake). But, little by little, there is room to add flavors to the bag, such as a cucumber fermented in-house or lox (cured salmon that can be ordered in a sandwich, served with bagel, cream cheese, tomato, caper for R$56) .

There are also dishes that fulfill the same function, such as varenique, a pastry filled with potatoes with caramelized and fried onions (R$54), and desserts, such as the walnut, honey and spice cake (R$23, slice).
At the end, you can stop by the window in the middle of the room and continue the task of tasting flavors at home, ordering to take away items such as tongue, roast beef and egg salad — the spirit of the deli.

Bar Sororoca
The heart of the new address, which has been open for three weeks in Pinheiros, is not exactly in the kitchen, to the right as you enter the beach-style house on the west side. The fishmonger’s is located in the back, a glass-enclosed room where fish and seafood are cleaned, portioned and stored at the table — soon, they will also be sold for customers to take home. Furthermore, the plan is to operate all the input logistics, purchasing directly from those who fish.

The name of the bar was not chosen randomly: the intention is to prepare seasonal fish and open the way to new possibilities, breaking the predominance of salmon and sea bass. The sororoca is one of them, but there are also mackerel, mackerel, dog’s eye and pup among the examples. The lean menu, with around 12 options that rotate depending on what is available, has dishes to be shared. It is divided between cold (sweet and sour buri with rice balls, for R$ 28), hot (crab broth with tucupi, for R$ 24) and hot (cambucu, for R$ 112), which has couscous made from flour as a side dish. water (R$ 28) and butter bean salad (R$ 35).

The ingredients used in the North of the country give a clue to the name of one of the partners: Thiago Castanho (formerly from Remanso do Bosque) from Pará, who teamed up with Gustavo Rodrigues (Lobozó) and Marcelo Corrêa Bastos (Lobozó and Jiquitaia). Although food plays a central role, the bar side appears in relaxation and care with drinks. The wine list was created by Daniela Bravin and Cássia Campos, from Sede 261, voted best wine bar by the special O Melhor de São Paulo. There are also drinks and smoothies with Brazilian fruits, such as soursop and cupuaçu. For now, the house is only open on weekends.

Drunks

The menu has signature drinks, all with confectionery garnish, and snacks with a Japanese touch. The restaurant is run by Marlon Silva, bar chef, and Cassiano Oliveira, chef de cuisine, in partnership with Guilherme Mora, from the Osso, Incêndio and Cór restaurants.

On the alcohol menu, in addition to a description of all the ingredients, the customer can find the characteristics of the drinks, such as alcohol content, smoothness, bitterness, freshness and sweetness. Among the softest is the I swear it is the last one (R$ 52), with a blend of rums with noisette butter and a garnish of banana mousse and cocoa butter. Mr. drunks (R$55) uses almond bourbon, mezcal and passion fruit nectar in an earthy texture. To eat, there are options such as mini-burgers with sherry mayonnaise, gouda cheese and red cabbage pickles (two pieces, R$39). There are also vegetarian options.
