This Saturday (6), carbonara day is celebrated. The date pays homage to one of the most famous dishes in international cuisine and an icon of Italian culture. In the capital of São Paulo, restaurants are preparing to offer pasta and even pizzas and hamburgers, with flavors based on Italian cuisine in different price ranges.

The traditional recipe requires a simple list of ingredients: pecorino cheese, guanciale (pig cheek), black pepper and egg yolks. The technique is delicate, as the sauce is prepared with an emulsion of egg yolks, cheese and pasta cooking water. Care must be taken so that the result does not turn into a scrambled egg mass.

Mooca’s Pizza
Led by chef Fellipe Zanuto, it won the title of best restaurant to go to with the family in the special O Melhor de São Paulo. There, carbonara is produced with bechamel sauce, pancetta, grana padano cheese and soft egg. Pizza portions come in versions of four (R$58) or six pieces (R$82). On the drinks menu, customers can choose between iced tea (R$ 12), juice (R$ 15), long neck beer (R$ 14), glass of wine (R$ 27) and drinks, which range from R$ 26 and R$34.

Located on the ground floor of the JK Iguatemi shopping mall, the restaurant offers fettuccine carbonara (R$96), with fresh pasta and sauce garnished with truffle oil. There are dessert options, such as papaya cream with cassis liqueur (R$39) and piadina with strawberries, dulce de leche and ice cream (R$39). House drinks range from R$44 to R$58.

Giro Ristobar
In Vila Nova Conceição, in the southern region, chef Salvatore Loi, who runs the restaurant located on the ground floor of Eataly, recommends spaghetti carbonara (R$69). For dessert, there is an oven-baked apple, puff pastry and cinnamon ice cream (R$33) and tiramisu with pistachios (R$36). Signature drinks cost R$42.

Il Capitale
On Oscar Freire Street, queues are common. At Il Capitale, the public can observe the work in chef Ricardo Dicamargo’s glass-enclosed kitchen. The menu is classic. Among the spaghetti versions, the carbonara model (R$87), made with free-range eggs, guanciale and pecorino, appears among the best sellers. For those who want a more intimate experience, it is possible to try the dish at Fiaschetteria del Capitale, sister house, which has only 25 seats.

La Braciera
It also offers a reinterpretation of the flavors of carbonara. La Braciera, a Neapolitan pizzeria, offers pizza carbonara only in the individual version (R$ 78) with mozzarella, egg, bacon, pecorino and black pepper. To accompany the meal with a glass of wine, you need to pay R$32. Non-alcoholic drink options include mate tea with lemon (R$16), Italian soda (R$19), ginger mule (R$29) and soft drink (R$ 8.50).

Mila
Self-described as an “urban osteria”, the establishment offers a vegetable version of branchy broccoli carbonara with lardo (R$ 68). There is also a vegetarian version available. On Mila’s menu, you can find pappardelle with beef and pork ragu with curd and kimchi (R$89) and also black garlic pizza, cheese and honey fonduta (R$70).

The restaurant is the firstborn of Italian chef Rodolfo de Santis, who runs other businesses in the capital of São Paulo. One of the highlights of Nino Cucina is the carbonara, with spaghetti, free-range egg, pancetta, black pepper and pecorino, a classic house recipe without cream, for R$59.

To go with it, a portion of crispy fries costs R$16.

In 2023, it was elected the 51st best artisanal pizzeria in the world and the best in Brazil, according to the Italian 50 Top Pizza World ranking. At QT, the classic carbonara also had a pizza version (R$62). The recipe is topped with Fior di Latte, Grana Padano cheese aged for 12 months, guanciale and egg. The menu, for the most part, has drinks for R$42.
