Brazilians at World of Coffee will give lecture and competition – 06/16/2023 – Café na Prensa

Next Thursday (22) World of Coffee, the main specialty coffee fair, begins. This year, the event will be held in Athens, Greece.

In addition to exhibitions, lectures, workshops and tastings, the fair will host the World Barista Championship, which annually elects the best professional in the preparation of coffees in the world, and the World Brewers Cup, the latter focused on strained coffees.

Brazil will be represented in both competitions, respectively, by the brothers Boram and Garam Um, from the São Paulo coffee shop Um Coffee Co.

Brazilian José Augusto Naves competes in the World Cup Tasters Championship, which rewards the best taster.

The country will also be present at the fair with food scientist Verônica Belchior, who will give a lecture on the chemistry of roasting, and neuroscientist Fabiana Carvalho, who will speak about the impact of the colors on coffee packaging on consumer behavior.

COFFEE WITH MORE THAN 96 POINTS

Two coffees from the acclaimed geisha variety scored more than 96 points (on a scale of 0 to 100) in the 2023 Best of Panama competition, the result of which was announced last week.

Carmen Estate Coffee beans achieved an impressive 96.50 points in the washed broom category, while Mount Totumas Coffee farm scored 96.25 points in the natural category.

Scores are considered very high. Specialty coffees have at least 80 points. Above 90, the grain is already considered exceptional.

Geisha (or gesha) is one of the most prized varieties in the world and generally produces a very aromatic coffee, with floral notes and balanced acidity. Therefore, it can reach very high values ​​– it is common for them to be sold in disputed auctions.

COFFEE THAT GOES…

Takkø, a coffee shop in Vila Buarque, in the central region of São Paulo, is saying goodbye to an extraordinary coffee from the Espírito Santo mountains roasted by Tocaya (R$ 17, strained in the V60 or aeropress).

The beans from producers Everaldo Cassandro and João Batista are at the end of their range and should leave the menu in the coming weeks. With hints of honey, orange and papaya, this is one of those coffees that retains elegance and sweetness as it cools down.

One of the pioneers of the central region, Takkø completes 10 years of existence in 2024.

While planning the celebration, partners Rodolfo Herrera and Flávio Seixlack are preparing to open Dōmo, a music-focused bar —which will feature a sophisticated acoustic system— just a few meters from the cafeteria.

In addition to Herrera and Seixlack, the bar will have Denis Fujito as a partner and should be opened in the first half of July.

… COFFEE TO COME

The Santa Pausa coffee shop, located in Vila Leopoldina, west of São Paulo, has launched two new coffees in partnership with the award-winning farm Daterra and three-time Brazilian barista Silvia Magalhães.

They are grains produced in the cerrado of Minas Gerais. The Espresso Collection has a sweeter and fuller profile, while the Sweet Blue has slightly floral notes and citric acidity.

In addition to being available for consumption on site (espresso, R$7.90; or strained in the V60, R$16), the coffees can be purchased in 250 g packs, in beans or freshly ground (R$62).
