Bololô: the bar in SP by Mc Ryan, from ‘cigarrinho da Paz’ – 10/30/2023 – Restaurants

Even before the opening of Bololô Restaurant e Bar, MC Ryan’s new establishment was already mentioned in the song “Let’s Go 4”, performed by him and five other artists. In the verses, funk singer MC GP sings that he is going to have dinner at his friend’s restaurant and order pasta carbonara, a dish that would later become one of the most requested by customers in the first month since the place opened, at the end of September.

Ryan is the author of the hit “Tubarão Te Amo”, the song with the verses “Tubarão, te amo/ Falcão, te amo”. His restaurant, Bololô, went viral on TikTok after the musician said that he could “smoke his peace cigarette” there.

Anyone who arrives at the Jardim Anália Franco restaurant, in the east zone of São Paulo, comes across a two-story building with exposed bricks that contrast with ornate gates made of black iron. The interior follows this industrial aesthetic with dark metal pilasters, some burnt cement walls covered in abstract paintings and others that alternate between mirrors and wooden panels.

Upon entering, receptionists place bracelets on the arms of customers who act as controls.

After the identification stage, visitors can choose between the ground floor, which is closer to a traditional restaurant room, and the upper floor, which also has tables for lunch or dinner, but which looks more like a bar.

At the top, where younger people tend to hang out, the space has tables that accommodate larger groups, with padded benches. There are also round options surrounded by high stools, serving as a support for glasses and portions for those who go to the place to enjoy happy hour or even a hangout — this is because the bar is open until 1 am.

On that floor, the music is not just ambient sound, the volume is really loud, but it doesn’t compare to bars with a dance floor. When there is no guest act playing at the venue, customers can choose songs to put on the playlist. Although funk is the most played rhythm there, this is not a rule.

In addition to the sound, one of the distinguishing features of the upstairs is the retractable roof, often mentioned by Ryan in the videos he made to promote the house. His partner at the restaurant, the businessman known as Miami, says they are studying the installation of exhaust fans, which combined with the open area, would allow the use of hookahs in the space.

During the report’s visit, no customer was seen smoking any type of cigarette in the place.

To eat, customers can choose between different starters, main dishes and portions. Miami says that the menu was based on his taste and that of his partner. The two listed dishes they liked most, organized a tasting with the chefs who run the restaurant’s kitchen and defined what would be served at Bololô.

Thus, the menu has three parmigiana options (from R$62.90), seven flavors of risotto (from R$72.90), four pastas (from R$69.90), in addition to of meat, seafood and executive dishes (served from 12pm to 3pm, Tuesday to Friday, from R$36).

Since the opening, the spaghetti carbonara (R$ 72.90), the risottos and the gold-leafed tomahawk (R$ 252) have been the most ordered at the restaurant — the latter, a cut of meat, is the flagship of the restaurant. House.

Vera Lúcia Santana, the grandmother who played Ryan’s mother, says that she had never prepared the Italian recipe mentioned in her grandson’s song. It was on a weekend that she spent in Bololô’s kitchen that the chefs taught her how to make pasta, which ended up being popular with customers.

She says her love for cooking came when she worked in a shelter for minors, first as a cleaner and then as a cook. Despite not mastering all the gastronomic techniques, Vera says she spends her afternoons at the restaurant, where she watches the preparations and learns new recipes.

Around 8pm, she leaves the house in the hands of Miami, who also doesn’t venture into the kitchen, but prefers to run the bar — a section, in fact, that occupies practically half the pages of the place’s digital menu.

The drink named after the house has sake, strawberry, kiwi and raspberry and costs R$ 46.90. Another original option is the shark —Ryan’s nickname in the world of funk— made with gin, blue curaçao, lemon, tangerine and tonic water (R$ 49.90). The house also offers cocktail classics, shots and bottles of drinks.

The person who isn’t usually involved in the restaurant’s daily routine is Ryan himself, who decided to open Bololô to make his grandmother’s dream come true. Still, when he appears, he brings influential people from funk along, either as attractions who perform at the house or as clients. Miami says that the partner attracts many big names to the place, but that influencers, DJs and artists from outside of funk have also visited Bololô.

The idea is also to invite musicians from other genres to play there. Rhythms like pagode, for example, participated in events of this type. So far, names like Mulher Filé, Jean Oliver and DJs Raul and André MPC have been there.

The next event hosted at the restaurant is Halloween-themed and takes place at 10pm on October 31st. In addition to the presence of DJs André MPC and Abudah, already confirmed, the bar will feature surprise attractions, themed decorations and encourages customers to show up wearing costumes.
